By the way, I was raised in Utah (but now living in NY for over 15 years). There are different "recipes" for fry sauce depending on where you eat, but fry sauce is essentially a mixture of ketchup, mayo and chili sauce. And yes, it is awesome.

I'm in Wyoming, and fry sauce is available at Burger King, but they limit how many you get - like 1 packet per order of fries. It is just ketchup + mayo + hot sauce, so yummy.
I like to dip one end in ketchup and one end in ranch, then eat, but strangely, I don't like it when the ketchup and ranch touch on the fry, only in my mouth. Weird I know.

Frite Sauce! It's the best. Just mix mayo with a bit of really good Dijon mustard, and maybe some garlic or lemon zest. It is the French fry's perfect mate. Or for sweet frites, I make a maple Dijon creme fraiche, with Dijon and whole grain mustards, maple syrup, and, of course, creme fraiche. It's like a French-American honey mustard, but better.

It depends on the shape of the fry. Ketchup, of course for steak fries and crinkle-cut fries.
Salt & Vinegar for English-style heavy 'chips' or HP sauce.
And plain salt for skinny fries!

Back when I ate at McDonald's (>20 years ago), I'd order a strawberry sundae with a lot of chopped nuts and small fries. Fries were great dipped. Or I'd order small fries and saimin, throw the fries inside the saimin and push them to the bottom, so they would get bloated. Back when their fries were awesome -- fried in a beef lard mixture. *sigh*
Typically, I'll eat my fries with a mixture of mayonnaise, ketchup, and yellow mustard. The mixture being roughly mayonnaise 70%, ketchup 29.5%, and mustard 0.5%.
There's always chili cheese fries, like the ones at Steak n Shake or chili cheese tots from Sonic. I can't stomach Skyline chili more than once every 2 years...and I always regret it when I do go.

Curry dipping sauce!
First time I had this was at a dive bar in Manhattan (Fiddlesticks). Amazing sauce. I've seen it at a few different places since than, but this is my favorite dipping sauce.
I used to like multiple gravy's until trying the Poutine's in Montreal... they really were inedible (despite my addiction to disco fries).

"Pink mayonnaise:" equal parts mayo and ketchup with just a dollop of mustard. Sometimes there is some bbq sauce in there too. Simple, easy, and delicious!

Irish Nachos are amazing-especially when you add crab meat. Uhhh. I want this. Now.

Big steak cut fries, fresh from the fryer and salted are absolutely awesome when dipped into rich sour cream that's been mixed with snipped chives and black pepper. Seriously.
Otherwise, I like malt vinegar. I apply it fry by fry so's to not make them soggy.

This reminds me of a story. I live in my hometown of Baltimore now but for 18 years I resided in Los Angeles. French fries and gravy are indigenous to Baltimore. While in L.A. at Jerry's Deli in Studio City I asked the waitress for them. She looked at me and said, "I don't think we can do that". "Do you have hot roast beef sandwiches?", I asked her. "Yes we do", she replied. "OK", I said. "Take some of the gravy you would use for the roast beef and put it on my French Fries." Her eyes lit up as though she had just discovered a cure for cancer and she bounced away. (She probably wanted to be an actress, anyway).

Perhaps it's just that we recently celebrated Canada Day an Quebec just celebrated its birthday, but there's nothing like a good poutine. Some fresh cheese curds (squeaky if possible) and some thick gravy. Then you've got yourself a heart attack worth having.

How about some good old Arby's "Horsey" sauce? I used to love dipping my fries (and potato cakes) into Horsey sauce.
You can make it at home:
1 cup of Mayo
3 tablespoons of bottled horseraddish cream sauce
1 tablespoon or Sugar

I love a belgian fries place in San Francisco called Frjtz (yes, no "i"), and they serve an amazing amount of dipping sauces. My favorites are the curried ketchup and the balsamic mayo...yum, yum, yum.

Whenever I eat my french fries at home ...I always separate them on my plate in little bunches ..and then ...TADAAAA!!! ...I deep one bunch in my OH SO LOVE of my LIFE ...full of healthy LICOPENE ...that is KETCHUP (can't live w/out it) ... Then ...I dip other bunch in honey ... next bunch must have TARTAR SAUCE, NEXT bunch will be happy w smashed AVOCADO, NEXT bunch can easily slide in some DIJON MUSTARD and sometimes I dip last bunch in SOUR CREAM ...OH YUM!!! I'm full and HAPPY!!!

Heh... spicy cod roe mayo... I liked it at this one place and just last night made my own version... though not cod roe. Equal parts masago and mayo... (well, just mix it until it's about the right color/texture you like)... then dashes of hot sauce... I used Red Devil because I like the vinegary kick to that, but I'm sure tabasco would work. Or sriracha. Here's the tricky part: I kept putting more and more hot sauce and tasting a little but it never tasted that spicy to me. Then I dipped a piece of popcorn (what I had next to me) in it, a little, and whoo boy was it spicy! Something about the mayo keeps it tame until there's something else there, I was really like wha?! I didn't have french fries on hand so I dipped ciabatta (and more popcorn) into and scraped the bowl clean, sooooo good...
(There's an izakaya on St. Mark's Place that does steak fries with spicy cod roe mayo but it's not that spicy, there isn't enough roe, and the steak fries kind of overwhelm the dipping sauce anyway.)
Mmm... I think I'll make more of this today :)
