If you don't mind coming to NY (and frankly, who minds?) try ICE.
There are lots of courses you can take but the Techniques of Fine Cooking covers a lot of ground. Give their site a browse for other ideas.

The French Culinary Institute also has a number of intense programs for amateurs.

Go to the CIA (Hyde Park, NY) and take one or a couple of Boot Camps. They're a blast, and certainly intense. Go to ciachef.edu and click on Enthusiasts for the schedules.

It sounds INCREDIBLE! Definitely going to go eat there when I'm in the city.

is there anything like this a reasonable flight from Israel? I've been looking for something like ICE for a while, and NY is a major connection from here, but the flight is a leetle expensive :-)
Paris looks slightly better, but still adds ~$900 to whatever I'm paying for the classes.

You might want to look at what the local colleges/vo-techs offer. I live in NJ and I took a course on the basics of cooking: it was six classes that taught knife skills and types of cooking - braising, grilling, and making stock. I supplied the chef's knife and the instructor had recipes for approx. six classes. She was a graduate of The French Culinary Institute also - very knowledgeable. I learned quite a bit and would take the same type of class again.
