The versatile tortilla
In JEP's raisin thread, she mentions rolling up raisins, peanut butter & bananas in a tortilla, which got me thinking... what do you like to use for tortilla "filling?" I'd like to use tortillas more often, but haven't ventured beyond burritos. Sweet, savory, I need ideas, please! (I apologize in advance if this has been covered before; my search skills are limited.)

I fling everything in them! (Never done the raisin thing though....might have to!)
Besides the myriad of Mexican-style fillings, I like to use them for all kinds of "sandwiches".
Roll up tuna or chicken with drained cooked spinach and some cheese, bake til hot and crisp.
Fill with veggies and cheese, same thing.
Leftover rice and beans, couscous salads etc. get put inside with lettuce and tomato.
I like making cinnamon chips out of them and making fruit salsa.
Cream cheese and sauteed mushrooms and onions.
Brie and apples with a little cinnamon.

Quesadillas: Put most anything on a tortilla (beans, chopped meat or vegetable leftovers, sauted onions and herbs, coldcuts, scrambled eggs...) Put some shredded cheese on top and heat up in microwave or under the broiler. Microwave quesadillas are often the first thing kids learn to cook for themselves here in the Southwest.
Also, a warm tortilla with butter and a green chili you have just roasted over a stove burner. Delicious!

A lightly toasted tortilla (on a cast iron pan schmeared with buttah >:E) a thin layer of cream cheese and a dusting of cinnamon sugar makes a delicious sweet fix.
Other than that, I pretty much put ANYTHING on a tortilla...or just eat them straight. I do that alot actually....infact, I just ate one now :)

@ Chelley - have you ever had fresh made tortillas? If you live in an area where you can't get them, then you owe it to yourself to try them if you ever get the chance. If even freshtodiefor tortillas fall into the "still hate 'em" category ... then simply disregard and I won't give you any crap about it - we have food we simply hate (for me - peppers).

The doughnut shops here put pie fillings in them and fry them, then glaze them. The tortillaria down the street makes giant whole wheat ones for wraps. Since moving here, I've developed rather high expectations of tortillas. I want fresh, flavorful tortillas not from a package.

My Husband likes Dietz and Watson Souther Fried Chicken breast sliced with horseradish cheese on a tortilla with honey mustard. I buy Trader Joe's Tortillas. Usually Chipotle flavor, or Spinach.
I also grill portobellos I have brished with pesto and put them on a tortilla for him with feta cheese and some chopped scallions. I often make pulled pork and put that on a tortilla with some ranch dressing and shredded cheddar. I use tortillas for the low carb factors and they pack easy for his lunches.

When I'm out of bread, I put Nutella on flour tortillas and then roll them up. They go great with milk and definitely taste better late at night :)

I'm lucky to live in the Mission in SF- there's a grocery nearby that has hot, fluffy, handmade corn tortillas every morning. I love them lightly toasted directly on a hot burner with avocado, salt, and a squeeze of lime. Just the thing if you're feeling a little frail. I kind of think of it as mexican bread and butter.

I don't really eat tortillas - no real reason. My husband ALWAYS has some in the fridge, since that's his go-to canvas of choice.
For a quick treat, he usually fries up chorizo (another favorite of his), eggs, and peppers. Throws them in a tortilla with tomatoes.
He'll make beans and rice (no, no black beans..those are outlawed in our house) with ground beef, and throw 'em in and snack.
He makes flautas as well. Forgot what he puts in them.
There are few more dishes he makes up...

I have to agree with Chelly, I cant stand the things. there is just a texture issue for me I think. and I have had fresh tortilla's and sorry to say, they leave me cold.

@Chelly and huneybumper: I think texture is a big issue for all eaters. Tortillas, particularly not very good ones, can be flat and hard and get gluey when you chew them.
On the other hand, a young Mexican woman, new bride in the States, told me she had never eaten bread and was afraid it would be like biting into pillow stuffing! She eventually got so she ate bread when she felt it was polite but she still preferred tortillas.

I'm assuming we're talking about flour tortillas.... I grew up on them, and with any dish that was my utencil; tear and scoop. (Corn tortillas are similar but rolling and tacos are options too). Of course I was lucky enough to have home made ones and now I don't eat them because the store bought ones don't taste right. But we had them with basically all food, soups, veggies, meat, that was just how we ate. We never ventured beyond savory food but I'm sure its good with desserts too.

I'm munching a 12:20am snack of two extra thin toasty corn tortillas, mozzarella cheese, and salty sundried tomatoes at the moment. (yes, I like my sundried tomatoes in their intense little dehydrated state!)
I recently rediscovered tortillas after a long time without... @Ravara - like mexican bread and butter for sure.

Lately I have eating peanut butter quesadillas,,,mix Skippy Natural chunky pb with Savannah Bee tupelo honey, spead over flour tortilla half, lay medium sized slices of banana on top, warm in a covered skillet a minute or so, then fold & heat until almost oozing pb goodness---yum!

I love both whole wheat and corn tortillas... I use the whole wheat for:
Burritos
Quesadillas Capreses
French-style Quesadillas - with gruyere cheese and carmelized onions
Enchiladas
I fry them and sprinkle them with cinnamon sugar to eat with cajeta (dulce de leche)
I use the corn ones for:
Tostadas
I bake them for a topping on my Veggie Tortilla Soup

I think I posted somewhere on SE once about a dessert made with flour tortillas spread with gran marnier-flavored melted bittersweet chocolate and stacked...probably 8 tortillas with the chocolate no thicker than a tortilla between each. refrigerate and serve thin wedges with marinated oranges

I'd eat almost anything wrapped in a tortilla.
My most recent experience with corn torts is to roast them in a hot oven, crush them in a ziplock bag (or grind in a FP) and use them as a coating for chix. So many "aha" uses.

A warmed corn tortilla with sliced avocado and a pinch of salt was a great after-school snack when I was a child. Easy to make, fresh, and filling!
