Thai chili peanut salad dressing
Here in Florida we have a wonderful mini-chain called Evos, which is "healthy fast food." They air-bake everything instead of frying. They have a really delicious Thai salad with chili peanut dressing that I'm trying to replicate.
How would you put together a chili peanut salad dressing? I'm guessing chili oil, garlic and a little peanut butter would be involved, but I don't know what to add for the real body of the dressing.

It's got the requisite chili, peanut, garlic, etc. and it's easy to prepare.

Here is a recipe I found. I'm not sure it's exactly what you're looking for, but it's worth a shot:
Dressing:
2 lemon grass stalks
1 fresh red chili, seeded and finely sliced
1 Tbs. finely chopped cilantro
2 Tbs. fish sauce
2 Tbs. peanut oil
1/3 C. fresh lime juice
Remove and discard the tough outer skin from the lemon grass stalks and finely slice. Combine lemon grass, chili, cilantro, fish sauce, peanut oil and lime juice.

Is the dressing thick and peanuty? If it is, I have a great recipe for a peanut sauce that I use on noodles here. It's also especially nice on crisp, cold lettuce with sliced cucumber and carrot.
