Salads!
I grew up hating vegetables and thus, salads as well. My mother would often make generic side salads for dinner of iceberg, tomatoes, cucumber, and olives - turned my stomach. Everyone liked to laugh as I stubbornly munched on plain lettuce, grumbling the entire time.
It wasn't until a few months ago at Cowboy Ciao in Scottsdale that I ate a salad so good that I finished and loved every.last.bite. It had cold Israeli couscous, chopped spring mix, diced tomatoes, sweet corn, pepetas, and raisins with some sort of light vinegarette (I'm guessing). So I started to rethink my hatred for salads ...
After recreating that same salad a few times, I started getting more creative with my salads and have developed a refreshing love for them (a contagious love, apparently, as I often come home to find my boyfriend halfway through a salad so big he's eating it out of a mixing bowl!).
He calls them "skavenger salads" since he just puts in whatever he can find in the fridge (how cute!). A regular favorite is chopped spring mix, sliced cucumbers, halved grapes, almonds, and feta with a little red wine vinegarette dressing.
I've started adopting his skavenger approach though, and it's working out well. Today's lunch: chopped spring mix, thinly sliced baby carrots, sliced cucumber, raisins, goji berries, sliced almonds, and sunflower seeds with a ginger/red wine vinegarette dressing.
