Costa Rica eats!

Heading to CR in August. I expect gallo pinto, which is great! Anybody take a tour of the cheese factory? And, has anyone had vino coyol or guaro, which I understand are homemade varieties of hooch. Any dish that is not to be missed? Thanks!
