Potluck breakfast recipe needed
Good afternoon all!
We have a coworker leaving on Friday for another position, and we're doing a breakfast instead of luncheon. I'd like to make something other than a coffee cake or muffins, and we have someone bringing fruit. Does anyone have an egg based or other type of recipe that would reheat o.k.? We have a toaster oven and a microwave available for reheating. The skill level could be very advanced, as I am known as the cook in the office.

Yes! Sausage bread pudding!!! Everytime I make it, people rave. It reheats very well in the microwave, too.
I've made some modifications since I posted the recipe, though. Now I substitute slices of apple for the mushrooms (from 2 peeled and cored apples), 1 bulb sliced fennel for the asparagus, and a big bunch of fresh chives for the dried oregano. Delicious!

My thought is to brown some breakfast sausage, make some scrambled eggs, and take both separately with tortillas, shredded cheese, sour cream, salsa, etc. and have a "make your own" breakfast burrito bar.

Smitten Kitchen's Baked French Toast is always a hit - similar to a bread pudding, but with a cinnamon and maple-y delicious twist.

I like to do some eggless frittatas...something different and no worries if someone is allergic to eggs. I make them in muffin cups or even mini muffin cups so they're personally sized already.
I once took a griddle to the office and made pancakes to order for a presentation for a brand of pancakes... I made the batter at home, took it to the office in a plastic bottle where I could shake it and pour it directly onto the buttered griddle. It was fun and people enjoyed it. I am vegetarian, so I would pair the pancakes with some veggie bacon strips, but if you're not, you can use up the left over space in the griddle to heat up some canadian bacon.

I know you asked for egg-based stuff, but two things that occurred to me as I saw your headline was fruit salad and baked oatmeal.

Biscuits, either normal-sized or mini-sized. You can make them yourself in large batches, or buy a few boxes of them from a local eatery. I live in the South so it's easy for me to get them, but I imagine you can find them up North or out West too :)
(Don't forget jelly, honey, butter.)
These always fly when I put them out for morning catering events.

Have some fun at breakfast time. Consider making breakfast sandwhiches (toast, egg & flat sausage) and using various cookie cutter shapes to trim. Perhaps think about shapes that represent your co-worker's style. If you have time the night before perhaps consider making some fluffy pancakes and go at them with the cookie cutters.

Jimmy Dean sausage used to have a good breakfast casserole on their website - I like it better with real bulk breakfast sausage bought from the butcher counter, though!

I've brought in 3-4 pounds of lox, cream cheese, bagels, and crackers to work, while my coworker brought in the prosciutto. It's great for breakfast and no need to heat.
A coworker made something tasty that looked like lasagne (mainly because it was made and served in a large rectangular casserole dish and was baked) but it was made with eggs, small pieces of bacon, tomatoes, mushrooms, onions, and bell peppers. It had cheese on the top too. I recall picking the cheese off, as well as the onions out.

I guess it's my southern roots showing...what about shrimp and grits? Or green chili cheese squares? (kind of a crustless quiche) Can be served cold and top with Salsa...mmmm. Or baked cheddar cheese grits, with crispy crumbled bacon and scallions scattered over the top....You can get great recipes for all this stuff with just a quick internet search...

Paula Deen did a quiche with a hash brown crust. I think she used frozen hash browns, but you could certainly make your own. I thought it was a brilliant idea, but haven't tried it yet. I imagine it would also work as a large casserole, cut into square servings and reheated in the toaster oven or microwave a couple at a time. Mine would have bacon, spinach and mushrooms, but obviously you could add any ingredients you and your co-workers like. You'd have to grease the pan well to prevent sticking, or use a non-stick pan.

Look at the Bisquick website for the Impossibly Easy Breakfast Bake. I substitute egg beaters, and turkey sausage, low fat cheese, and fat free evaporated milk. I omit the onions and add sliced grape tomatoes and serve with a peppered gravy or hot sauce. Adding more eggs or egg beaters than the recipe calls for works well too. Also I lowered the heat to 375 degrees.

@izatryt - sorry, only 4 Tlbs. of butter mixed with the potatoes for the quiche crust, but I don't see why you couldn't use a couple of sticks, or even substitute lard or that greasy fat in the can stuff. That stuff delivers on it's promise!

Thanks everyone for the great ideas! I'm definitely going to be cooking something, since I like to leave things like bagels, etc to those who don't cook. I'm also not worrying too much about allergies....there are 60+ people in our office, and quite a few are bringing something....so I think there will be enough other things for the non egg eaters. I'm leaning towards a breakfast casserole....thanks bitchincamero & perkymac for the ideas.....or a mini frittata type dish...using mini muffin pans. The party has been moved to next Friday...so I'm going to be experimenting this week-end....breakfast anyone?

@Perk - I looked up that recipe and it actually looks pretty good. A few modifications with the ingredients of course. Like adding at least 1/2 can of that fat in a can stuff. See you at mepolo's!

O.K....coffee will be ready when you get here. I have a mason jar of bacon grease in the fridge...between the three of us we should be able to clog everyone's arteries! lol

I do not like most breakfast casseroles -- most I have been served contain lots of "cheese food" "cream of" soups and other scary things. However, I do have one recipie that I make from time to time that is incredible. It is from the allrecipes website.

I make a few changes - I grate my own potatoes ( but I am sure frozen would be fine.) I also sometimes switch out the cheeses although I do love the swiss. Sausage is as good (if not better than the bacon) it is a great basic recipie that can be adjusted to suit your tastes.
This casserole is great room temp as well as piping hot.

Another interesting breakfast alternative I saw in the USA. Is a sort of a sausage pie come omelette.
