Online Instructional Cooking videos
For the last couple of years I have been feeling more and more deprived of quality instructional cooking on tv. I truly enjoy learning from the professionals, and am wondering if people know of some good videos to be had online? I really liked the Gordan Ramsay one's on youtube, have subscribed to the Ming Tsia vidcast, and even enjoy the Eric Ripert toaster oven vids in lieu of some cookie cutter tv personality giving me a mediocre recipe and little else.

Rouxbe.com is interesting, although I think you might have to pay a fee to access a lot of content.

Definitely check out Mark Bittman's "minimalist" videos on NYTimes!! They're fantastic.

There are two sites, with almost identical names (but they are different!) that I visit occasionally:
A bit more polished & original content is at ifoods.tv
A little less polished, but more user contributed content is at ifood.tv/videos
Another great source is to look up the dish you are interested in on Wikipedia. e.g. Here's a link I came across for Kasespatzle:

If you scroll to the bottom you will see a link under resources that takes you to a video at the blog "off the broiler." The point is I've found blogs, photos, videos & instructions by starting at Wikipedia....then following the sources provided.
As a side note.....you will notice that the video in my example is actually hosted at google. You'd be surprised at how simply it is to get quick results by simply doing a video search with key words. e.g. "Tamale Assembly" "knife skills" "kneading bread" etc...

i heard about this place online called rouxbe.com... it's like an online cooking school. you need to pay, but the sample pictures I have seen are really cool...
