Barillo four-cheese tortellini with homemade pasta sauce & spicy Italian sausage.
Baby spinach, cherry tomato & corn salad with bacon vinaigrette.

It was white bean stew with spinach, artichokes and lemon, and rice pilaf with walnuts, mint, dill and parsley.

With a Pinot Grigio?

I made grilled ribeye steak with corn and grilled local zucchini with my #1 brother. Perfectly Pittsburgh rare. I am currently in a ribeye stooper...Ah, life is good.

dinner tonight? some salted peanuts in the shell and a diet pepsi. I'm over the cooking thing right now.

dinner tomorrow? grilled chicken with mango salsa and if I don't have a baked sweet potato, I swear to Christ I will take a life.

* 9 ounces thick-sliced smoked bacon, cut into small dice
* 1 medium shallot, minced
* 1/2 cup red wine vinegar
* 1 1/2 teaspoons light brown sugar
* 3/4 teaspoon Dijon mustard
* 2 pounds spinach, washed, stemmed, torn into bite-size pieces, and thoroughly dried
* 3/4 cup toasted pecans, coarsely chopped

I didn't use the pecans or shallot, however.

Grilled cheeseburgers to please the men here.

There was enough from the garden to use, so there was also a sliced cucumber salad with lots of fresh dill and a splash of vinegar; cold leftover salt potatoes (a Syracuse thing) cubed with onion and fresh tomato and homemade ranch dressing; a can of Bush's beans.

Watermelon for dessert.

Leftover chicken, leftover crummy noodles - morphed into casserole with broccoli. Salad with cukes & leftover tomato salsa. Lemonade.

I am trying to master the perfect pizza dough, so homemade pizza w/ spicy italian sausage(turkey), two cheeses, caramelized onions and mache. Mmmmm....

Oh, and a lovely prosecco and pomegranate cocktail! My reward for working all day today.

(BTW, does anyone have a pizza dough recipe that they just love?)

Raspberry infused vodka (made two years ago) tonics with large lime quarters, leftover roasted chicken on tortano bread (local) with mustardy mayonnaise and red iceberg lettuce (local) garnished with red pepper slices. My husband had a cup of broccoli soup that had a little gorgonzola. We finally had a really warm day - it was 80.

Sounds like SE folk are eating well!!!!

Last night we tailgated in the parking lot of the PNC prior to a RUSH concert. (Been listening to them since 1976.)

I prepared Guacamole, Salsa, Shrimp Cocktail and Ceviche. Snagged some Wegman's cookies for dessert. Perfect night for a great show and "deluxe" tailgating meal.

I had a ribeye too. Creamed peas and a baked sweet potato dressed southernish. :)

I actually got to eat it after I cleaned up the mess of me having fallen through my glasstop coffee table. If the calories in my meal weren't gonna kill me my furniture was....

@feriorrenna - Holy Shards!!! How many times have I told you NOT to dance on the glass coffee table? What music were you dancing to? Were you cut? I'd dress up my sweet potato after something traumatic like that too! Hope you're ok! ;-)

Tonight We are having Grilled Chicken wings in 3 different flavours. Hot and spicy, Barbeque and Teriyaki. With them we will be having Garden Salad, some roasted potatoes and carrots, and whole roasted garlic. For dessert we have store bought Missippi Mud Pie, as I can't do dessert worth a damn.

Tonight, we are having:

Grilled Santa Fe Chicken Wings (for the meat-eaters), and
Grilled Jalapeno Poppers (for the Vegetarians)

Tex-Mex Corn Fritters with Chipotle Salsa

Five Bean Salad

Cold Watermelon Slices

Homemade Chocolate-Choclate Mint Chip Ice Cream Sandwiches

Dos Equis Beer with lots of lime (for the drinkers), and Fresh Limeade (for the non-drinkers)

I manage to walk away from it with only a tiny cut on my foot. And the sweet potato got dressed with ample amounts of butter, brown sugar, cinnamon and salt. Yummy

Sunday night is pot-luck for us. I'll probably have sunny side up eggs and buttered thick slices of toast. Porgy will have Knockwurst and baked beans. Love Sundays!

Last night I cut up a chicken and used the drumsticks and thighs for arroz con pollo, plus refried black beans. I put the breasts/wings in some broth and water to stew while dinner cooked, then strained the broth from that and put most of it in the freezer. The rest of the broth went into chili gravy for enchiladas we just ate for lunch (accompanied by last night's leftover rice) using not even half of that stewed chicken breast. So now I have leftover chili gravy and stewed chicken and most of a bag of fresh yellow corn tortillas. Can you tell that I love leftovers?

@stripeychef... i love smitten kitchen recipe's for pizza dough. they always turn out well.

i'm having peppers and sausage pasta and some homemade focaccia.

Jerk chicken with pineapple, clear coleslaw, julienne sweet potato fries, baked plantains and bread & butter pickles.

Grilled angus burgers with farmstand tomatoes, bread and butter corn and homemade potato salad. Son requested the grilled burgers because I was cooking. DH grills them 'til they're black, then grills them some more for good measure. Son and I like them mooing. Dessert was NY cheesecake with fresh strawberries.

Crockpot all day cooked dill pot roast with sour cream gravy, green beans and new potatoes cooked the old fashioned unhealthy way, sliced East Texas tomatoes and fresh peach cobbler with vanilla ice cream. Disclaimer: I took dinner to my 80 something inlaws and that is what they wanted. It was AWESOME!

Baby back ribs in the smoker all day, finished on the Big Green Egg with Sweet Baby Ray's bbq sauce.

Baked beans, creamy potato salad, mac & cheese for the non-mayo eaters, broccoli steamed just a tiny bit. (Love broccoli with my ribs!)

Sunbeam barbecue bread with butter. Can't beat it.

Fresh strawberry three-layer cake, cold from the fridge.

Beer & a crisp, cold white wine for me.

Visited Tennessee with a bunch of friends (~15 people) from an online game we play. Everyone was over 21, so eating and drinking lasted from 12 - ???. My husband and I left at 9:30 pm.

Barbecued pork, cole slaw, baked beans, fries, lots and lots of sweet tea. I had a strawberry cheesecake. Everyone (but me) had alcoholic beverages ranging from Blue Moon and various types of beer to vodka and scotch. There was a point where Krystal burgers were introduced. I looked at it, having never seen a Krystal burger, and steered clear. There were onions in them and the meat was freaking GREY.

@Editmom: WOW. I want that dinner! How awesome is Sweet Baby Ray's?! I could eat a whole bottle I think. Second fave: Bull's Eye.

Tonight: Grilled chicken strips, farro & corn salad, grilled radicchio. Had an amazing farro salad at a restaurant on Friday, so I'm trying to figure out how to recreate it. Unfortunately, I'm still not sure what the teeny tiny orange bits were!

Unless I decide to save this for tomorrow when I can go to the farmers market. In which case it'll be a farro & tomato salad.

Last night's bounty from the farmers' market: baked whole Alaskan coho salmon filled with raspberries at the fisherman's suggestion, roasted golden beet salad, warm potato salad, beet green salad, and rhubarb strawberry crumble. Heaven. Small quibbles: the raspberries were too sweet for me, and not having rolled oats for the crumble, I used steel cut - in an experimental mood. D liked the nutty crunch; I wasn't so sure.

Pan-seared red snapper with mango-peach salsa over brown rice with a side of sauteed broccoli dressed with red chili flake and soy sauce. Yum!

Chicken Cordon Bleu w/white rice & steamed green beans. Came out better than when I made it before; I used non-smoked ham.
