good chocolates?
So here's what's up:
we are considering stocking chocolates at my coffee shop--nothing fancy, just chocolate bars, most likely.
So the question is this--what are some really good, high quality chocolate bars/ chocolate makers to look into? I already figure Ghiradelli and Lindt, but those are pretty much available anywhere, and we want something that you can't much find elsewhere....G&B and Scharfen Berger are also being considered...any other suggestions?
I'm in Alabama, if this helps at all.

Oooooh, some chocolatiers won't deliver in the summer because they can't guarantee the quality of their product in the heat. I hope you can find a source for year-round supplies.

If you're looking for boutique chocolates from small suppliers, try the Unseen Bean. He's actually a coffee roaster, but he also has some chocolate bars that contain his coffee. They're pretty darned good.

I like Theo chocolate bars. They have some single-origin bars and then some unusual flavored bars - the coconut curry bar is freaking DELICIOUS.

@sobriquet - I just finished off a Theo dark dark dark Venezuela 91% bar.
mmmm.
I'm in Seattle - somehow I got the idea that theo was just local? but who knows, that might have been a random assumption I made.. it's good good stuff though!!

@gretchenx5 - I found that one in the Bowery Whole Foods in Manhattan. I'm in the DC area, though, and I can't find them anywhere around here.

I get Charles Chocolates when I go to Whole Foods and share it with people at work. They're available nationally, but not available at every grocery and drug store chain. I'm not a chocolate fan, but I buy them for their cannisters. I'm a sucker for cool packaging. Everyone at work seems to love they way they taste.
To maintain quality and support local companies, I'd opt for local chocolatiers. Hopefully there's a quirky, artsy one nearby...?

Chuao and Vosages. If you want to help a small business, The Fudge Factory in Appalachicola, FL. truly has some of the best handcrafted chocolates I've ever had. They beat most of the ones here in San Diego (and there are some darn tasty ones here). The gentleman who owns the place is really great.
