Do you have fennel the herb or fennel the bulb? Makes a bit of a difference. I love the herb fennel with fish and chicken, it's a natural for both. The bulb I love to slice thin and use it as a pizza topping, or a salad add-in. Fennel bulb also makes a fantastic slaw, and is perfect when paired with citrus.

Hoooray Fennel!
My favorite way to eat it is in a salad. Slice it thin, mix with some thin sliced onion. For the dressing Lemon juice, salt, crushed garlic and olive oil. Mix and taste until it seems right to you. This is a really simple way to eat it. I've added cheese, cucumbers, radishes, and other things but the basic recipie is great.
You could also roast it or put it into a tomato based stew.

In a salad try mixing it with apples and the lemon dressing mentioned above. For a little more sweetness add some agave nectar. I also love braised fennel.

My favourite Fennel Salad: Add fennel slices to sliced rounds of sweet seeded oranges, pitted black olives packed in oil, and thinly sliced red onion. (Tip: Soak the rings in cold water for a half hour, drain and blot excess water. The red onions will be very sweet and ideal for the salad.) Prepare a vinaigrette dressing and dress salad lightly. Sprinkle chopped fresh mint on top and serve remaining vinaigrette on the side. This is a very refreshing dish and a good accompaniment to roast chicken.
