Favorite Omelete or other Brunch Foods

So, it's Sunday morning and I am eating one of my most favorite brunches. A broccoli and cheese omelete which consists of sea salt, fresh ground black pepper, garlic powder, Mediterranean Herb Feta Cheese, and Colby cheese. Mmmm, so good. Then I started wondering what the favorite omelete(s) was among the friends at SE. So let's talk-what's your fave? If you don't care for Omelete's-what's your fave brunch item?

I love a fluffy egg white omelette with spinach, sweet onion and goat cheese. I am not really into breakfast food as a rule, but if I am that is what I will have.

genovese omelette: basil pesto, sun-dried tomatoes, jack cheese and pine nuts.

Baked Eggs with fresh herbs, a wedge of cold melon, and a lemon iced tea!

Spinach and feta omelet, home fries, pork roll or sausage and a blueberry muffin grilled with butter. MMMMMMMMMM

Pancakes. Lots of pancakes! With bacon. And maple syrup.

at home:

eggs baked in salsa with cheese melted on top.

potato hash with lots of smoked paprika.

currant cream scones with plenty of butter.

coffee, lots of it.


in a crummy diner:

feta and spinach omelette with hash browns and rye toast.


bread pudding. preferably something sweet.

For omelets, my favorite is something I jokingly call omelet caprese: basil pesto (preferably with pine nuts), mozzarella, and diced tomatoes, usually with a side of toast.

My favorite weekend brunch, however, is the traditional Southern breakfast: Neese's sausage and/or bacon, eggs, biscuits with jam, cheese grits, and orange juice.

@Jerzee-we need to have brunch sometime (but can I have another muffin?)! That's another good one...There's just something great about spinach and feta. I like to have quesadillas with that combination. YUMMY

@cybercita: what is this eggs baked in salsa that you speak of? Sounds like something I would be interested in trying...

When dining out...Gotta be Eggs Benedict.

Waffles. Fried chicken and waffles. Bacon waffles, pumpkin waffles, chocolate waffles, any kind of waffles.

A friend of ours offers what he calls a Lumberjack Skillet, which includes grilled prime rib, redskin potatoes, bacon, cheese, all topped with egg ... you can see a photo here. This would translate well into a casserole for larger groups.

A "cajun omelete": Andouille sausage, green peppers, onions, tomatoes, pepper jack cheese and cajun seasoning. With crispy hash browns, white buttered toast and coffee.

I am on a life long quest to find the world's best buiscuts and sausage gravy. I make a mean version myself but have not achived perfection. The best so far: Diamond Jim's in Bellingham, WA. so frikkin' good...(any pointers?)

I'm honestly not sure of the order.

Sailordave, I make my biscuits with yeast in addition to baking powder and soda (bloomed in warm sugarwater of course). I even use half whole wheat flour and they come out as fluffy as KFC biscuits. Plus the whole wheat gives them SO MUCH more flavor and nutritional value. I use flour ground from soft wheat so it has a low protein content (I make it myself). Yum!

Favorite breakfast... where to start? I love breakfast. Corned beef hash with poached eggs, birds in a nest, waffles with fresh strawberries and whipped cream, omelette with spinach and colby jack, french toast.... I'd better stop, or this list could just go on and on.

RoTel tomatoes and feta cheese omelet!

Breakfast and/or brunch might possibly be my favourite meal of the day! That is, a weekend leisurely breakfast or brunch, of course:-). I probably haven't met an omelette I didn't like, from ham and mozzarella to broccoli and havarti, to onions, red peppers and asparagus with provolone, always with fresh herbs. Once a year I make what my Other Half lovingly calls "The Big Omelette" - sauteed onions & peppers, garlic, turkey sausage, turkey bacon, pan-fried red potatoes with eggs and gravy. We usually end up eating it for dinner though:-).

My other home-breakfast favourites include: pancakes (yesterday it was whole wheat pancakes with home-made blueberry syrup - pure heaven), pancakes topped with fried eggs, poached egg over sweet potato hash (with a little bit of lox & mustard-dill sauce on the side), shakshuka and waffles.

My favourite breakfast/brunch items when eating out - dim sum, cheese blintzes, spinach & feta quiche and crab & ricotta quiche (no, I don't eat all of these together:-))

Favorite omelets include Gruyere with chives and asparagus; spinach, mushroom and cheddar cheese; Tomato, basil and mozzarella. For entertaining larger crowds when blueberries are in season, I love Gourmet's (June 1999) Baked Blueberry-Pecan French Toast with Blueberry Syrup that can be prepared the night before. Oh my, oh my.......the possibilities are endless.

If any of y'all biscuts and gravy lovers get a chance to visit Memphis, please go to the Blue Plate Cafe! I truly think it is the best around.

This past year at school I rarely ate lunch, so I tried to eat hearty protein-filled breakfasts. I'd take a vegetable (my favorites being bell pepper, cremini mushrooms, or zucchini), cut it into a small dice (or just slices for the mushrooms), and saute it in a little butter until browned and soft. Then I'd pour in two eggs, plenty of really sharp white cheddar, salt, and pepper, and scramble it all together until cooked through. Served with a slice of good toast and a big cup of coffee, it makes an insanely good breakfast!
