Dinner, If I'm Feeling Ambitious

I have the whole night ahead of me, and I just want to relax at home and cook a really nice dinner. Anybody have any great ideas for some slow-cooked meals that I could put together? The more simmering, marinating, roasting the better! I just have no idea what I feel like making!

Parisian gnocchi, ie., poached pate a choux, sauteed with some choice vegetables and herbs. No marinating (you're out of time, probably) but plenty of hands-on work, and you'll probably have some left for the freezer.

Here's Thomas Keller's recipe, which I found amazing. But the condiments/accompaniments aren't exactly seasonally appropriate. He has another version with the same dough but using nicoise veg, though.

I've been salivating over this sausage & summer vegetable casserole with cheesy polenta topping that I found on Photograzing. I looked up her recipe and can't wait to make it. It's our very own bitchincamero! Here's the recipe link:

How about Carnitas? David Lebovitz has a great-looking recipe. Or short ribs? Maybe that's too much cooking time?

How about some arroz con pollo?

My favorite "I have all the time in the world" meal is roasted chicken, orzo risotto, and a nice big green salad.

Although @bitchincamero's casserole looked really amazingly good, too - and I don't even like zucchini! Wondering if I can switch the eggplant for potatoes and throw in things like corn and peas. Maybe with a side of fresh tomato and cucumber salad. Yum....

@jenilowrance - Yep, switch out any vegetable you like for another one and it would work just as well. Potatoes would be awesome! (That reminds me, I need to add that to the blog. Thanks!)

I don't know if this is the kind of "refined" meal you were in search of, but I was in the same cooking mood last night and I made pizza, though everything was from scratch. I made the dough, the marinara, I caramelized onions, grated different cheeses, fried up some Italian sausage. Pizza sounds simple enough, but it literally took a couple of hours.

my favorite "I have all the time in the world" dish is Coq au Vin. you brown all your stuff in a skillet, then add wine and simmer forever. the skillet and wine do all the hard work, all you have to do is chop some stuff and go buy a french bread, and then you are in food heaven.

my "i have all the time in the world dish but feel like experimenting some" dish is -
fry chopped onion in oil in skillet. add some garlic. add some meat peices. add some tomatoes or mushrooms or whatever else i want and plenty of herbs. simmer till meat is done, sprinkle with lemon juice and maybe cilantro, serve w/rice or pasta or mashed potatoes.

Beef shortribs braised with red wine, aromatics and herbs in a dutch oven. Served over polenta spiked with smoked mozzarella. I made it last Saturday night. We love, love, love it.
