Cheese Recipes?
I have never made cheese before, but I was just reading a blog that talked about making your own fresh mozzarella and I was intrigued. Does anyone have a cheese recipe that might be a good place for me to start as a beginner in cheese making?

Absolutely try it! I make goat cheese, and it really is easy. My favorite is with herbs, and lime juice as the acid. But please use stainless steel pots...aluminum will break your heart! Here is the way I do it...

Hi, Deliciouslysimple, I use a recipe similar to the one in Cary's link, except with cow's milk to make Indian paneer cheese and chenna cheese. I've also made my own ricotta/cottage cheese - heat up 4 qts. of milk until bubbling, then add 1 qt. buttermilk and stir continuously until curds form, which takes about 20-30 minutes.

I, too, make my own ricotta, cottage cheese, Lebneh (yogurt cheese), and cream cheese.
I've recently started making my own butter and buttermilk.
I think this trend toward "unprocessed" can only be a good thing. And, they taste so much better than anything you can buy ready-made, too.
There are recipes everywhere now, so I say -- go for it, and have fun!

Am currently reading "Animal, Vegetable, Miracle" by Barbara Kingsolver. She talks about making homemade cheese and makes reference to the Cheese Queen - Ricki Carroll. An internet search for Cheese Queen will give you all the information you need about cheesemaking and supplies. I soon may be making homemade mozzarella to pair with wonderful summer tomatoes and basil.

the place to start is YOGURT CHEESE!!!!! So simple and so delicious...
