Arepa Question
I went to the store without a list so instead of buying pre-cooked corn meal I bought instant corn meal (masa instantanea de maiz).
I've been googling for the past 30 minutes and the only thing I've come up with is somebody leaving a comment that they used instant corn meal and their arepas turned out okay.
So did I find a suitable sub, is instant the same as pre-cooked, or will I have a disaster on my hands if I try to make arepas tonight??

I think you should be ok using that. I've used Masa Harina before and they turned out just as good. So long as it's not that long-cooking polenta kind of cornmeal, I think you're good.

..could anyone post a recipe for Arepas? I haven't had one in years and would love to try making them on a recipe ya'll have tested out. Thanks!

it is not the same. a better sub would be instant polenta meal.
instead of arepas just make thick, griddled tortillas (aka gorditas/sopas)

Here's a recipe. They're fairly easy to make. And oh-so-delicious!
