Rhubarb pie (filling) recipe
After finally finding a crust I like (thank you Mark Bittman), I'm ready to branch out from my typical sour-cherry pie filling (also, I have the hardest time finding sour cherries--canned or frozen--in NYC. So annoying). My husband, I know, would love a strawberry rhubarb pie--but I need a good recipe recommendation. We like things tart (but not too tart!) and not too mushy. I'm willing to branch out from strawberries too. (And I'm totally trying that pie-in-a-jar thing. Best invention ever.) I'd love to hear suggestions you brilliant folks might have!

I haven't tried this recipe for rhubarb raspberry pie myself, but it seems to be very well reviewed and folks have successfully substituted strawberries for raspberries.
I have tried this recipe for rhubarb and strawberry compote. I'd recommend cutting the sugar to no more than 1/2 cup, and a squeeze of lemon is nice. You have to really keep an eye on the rhubarb as it quickly goes from not quite done to mush.

Rhubarb Pie Filling
Ingredients
2 C. rhubarb
1 1/2 Tbs. flour
2 C. sugar
dash of salt
4 eggs
1/4 C. buttermilk
1/2 C. orange juice
Directions
Cut up rhubarb into 1/2-inch pieces. Mix together flour, sugar, salt, eggs, buttermilk and orange juice. Add rhubarb and pour into unbaked pie shell. Bake for 1 hour. Top with ice cream, if you'd like.

I recently made a Rosemary Rhubarb crisp with strawberries that might lend itself nicely to a pie. It was incredibly aromatic with great depth of flavor. Let me know if you try!!

i'd recommend raspberry instead of strawberry. cooked strawberries always taste nasty to me. nigella lawson said that they had the consistency of dead slugs, and i'd have to agree with her.
i confess i make mine by feel so i can't give you proportions, but i just use sugar, salt, butter and flour. if you have a meyer lemon, the grated rind is amazing in a rhubarb pie.
my friend just made a delicious rhubarb pie with an extra crisp bottom crust. she said she did that by sprinkling a part of the sugar and flour on the bottom before she added the fruit.
