Pulled Pork Surplus!?!
Ok-so I made a huge batch of pulled pork (lots of pork butt/shoulder) the other day and still have tons left. I could just stash it in the freezer but feel the need to be creative. Any ideas? We've got about 3 lbs (guessing) left- and it's got a light coating of BBQ sauce. I'm sick of sandwiches, salads, soft tacos....who's got a better idea?

It's a good addition to BBQ baked beans, gives it a good mouthfeel, but 3lbs is alot, but that also depends on how many your feeding.....

I'd make a strudel...or a pie...or pocket pies... You got the idea - I'd treat it as a filling:-)

My first thoughts would be chili and pizza also. I would consider making stuffed potato skins too. I know it has some BBQ sauce on it, but it would still be delightful with some cheese in a panini. A sandwich I know, but I couldn't resist. How about enchiladas? Quesadillas?

Dumplings made with wonton wrappers.
Steamed or fried, served with a ranch or blue cheese dip.
With a big tall glass of frozen Bud Beer granita/ice as accompaniment.

@foodiemama........I am in PA. I'm driving with my head out the window and sniffing for your pork. I'm headed NW. Is that correct (from NW of Philly)? Do me a favor and put some on the BBQ with a fan, so I can catch the delicious scent? My sense of smell is legendary. I've met a few nice folks so far, but none have 3 lbs. of leftovers to share. Pity, that. See you soon!!! ;-D

Roll it up in corn tortillas and top with cheese, bake and you've got enchiladas. The small hand pies sound wonderful!

try making some hash....like corned beef hash....just use the pork instead of the corned beef......kinda hard to imagine.....but it's delicious.....orrrr......try what i had for dinner a few days ago.....like you i had some pork left over from smokin some boston butts an i was tired of bbq sandwiches.......if ya can believe that!!!...lol.........coarsely chop up a pound of the pork.....saute it with a chopped onion and a head of chopped garlic in a pan with some olive oil.....barely brown it,then put about a cup of Mojo marinade in the pan, cover and simmer for about 40 mins and serve with black beans an yellow rice

Is there really such a thing a too much pulled pork? If you haven't already sauced it, try mixing various barbeque sauces (SC mustard-based is my favorite, but Paula Deen has a mayo-based white sauce--shudder. ). We used to make our leftovers into hash- It was a mixture of whatever meat/poultry you had, potatoes, carrots, corn, celery, and onion, all stewed together all day. Now I want some.

foodiemama - about the beer granita - the first time I remember seeing a printed recipe was in the book Cooking with the New American Chefs by Ellen Brown. The recipe is credited to Marcel DeSaulniers and called "Budweiser Beer Ice". In the book it is called a sorbet but depending on what method one uses it will either be more sorbet-like or more granita-like.
It's Bud beer, sweetened a bit with a bit of lemon and orange juice added, frozen. Very chic, in a down-home sort of way. :) Good stuff.

Good thing gas is so cheap! ;-D My daughter in CA is paying $4.56, I only paid $4.09.
You wouldn't believe how many people were making pulled pork for Father's Day. The nose knows. I am so full of pork, coleslaw and beer that I have no more desire to make pulled pork pasties. Tonight, anyway. Perhaps, next time I'll make it all the way to foodiemama in the "main" Hbg. I'll be in your neck of the woods mid-July - Chambersburg.

@Foodiemama - I'm in Pittsburgh and am making 6 lbs. of pulled pork bbq on July 4th. Keep driving west and you'll smell us smoking the butts!
Another idea for leftovers Food tv has a show "Down Home with the Neelys". They share a recipe for BBQ'd spaghetti. I'll be trying it with my leftovers.
