Pizza Toppings

I just posted in "cooking and baking" regarding grilled pizza technique - now I'm making my list of toppings to provide for my "make your own grilled pizza" meal - some are untraditional, but I want to have fun with it. I also don't want to go completely overboard. What else needs to be on the list?

tomato sauce
pesto
BBQ sauce

mozzerella
cheddar
goat cheese

carmelized onion
regular onions
peppers
mushrooms
pine nuts?
pineapple?

You doing any meat? If not, I'd add more cheeses. In any case, I'd probably add parmesan.

Fresh basil, oregano (dried or fresh -- I actually prefer dried on pizza), red pepper flakes, tabasco sauce, olive oil, rosemary.

Fire roasted red peppers, jalepeno peppers, sliced tomato, olives, garlic.

A garlic cream sauce would be good. Or some other white sauce.

If you want to do some dessert pizzas, you could have some apples, cream cheese, cinnamon, allspice, nutmeg. Maybe other fruits.

Just brushing them with a little butter and topping with cinnamon sugar and maybe some nuts, would be tasty.

Maybe some roasted garlic cloves

No pepperoni, sausage, chicken, steak, ham, lobster, shrimp, crab? How sad.

For vegetarian, I love eggplant & spinach, or summer squash & zucchini on my pizza as well as all of the above suggestions, especially slices of tomato. Don't forget spices and parm reggiano cheese to sprinkle on top of the mozzarella, goat cheese or brie (yum).

Fresh summer fruit pizza for dessert is awesome too - sweet cream cheese (and pizza or sugar cookie base) covered with peaches and berries. Or even made to look like a savory pizza. Fun!

I'd like to second the meat request - if only to include pepperoni (classic) and grilled chix (substantial but healthy). If you want to round out the meat selections, you can brown some Italian sausage.

You might also consider a vegan "cheese" product. Some of them actually melt and don't just lay there looking like a bar of soap on your pizza. I used to use one called "veganrella" but I don't think they make it anymore. If you shredded it over the pizza, it would melt.

Any possibility for pitted calamata olives or anchovies?

If you do end up doing meat, Nalega, be sure to precook it before adding it. The pizzas aren't on the grill long enough (usually no longer than 2 minutes a side) for raw or uncooked meat to cook through or heat through.

As for the rest of your toppings, it's best to grate the cheese finely and slice veggies, etc., very thin. That way they have a fighting chance at warming up while on the grill.

Cheeses: Feta, smoked gouda, parmesian, pecorino, romano

Toppings: Fresh chopped or sliced tomatoes, olives, anchovies

White pizza toppings:

Ricotta
Spinach
Garlic
Olive Oil
Herbs

But then again sometimes it's easier for guests to manage if you provide toppings for a few pizzas rather than every possible pizza under the sun. You could do veggie, barbeque, white pizza, and people could customize from there.

I know that most of my guests won't eat the meat, but maybe I'll add one just in case. I'll definetely have olive oil and herbs on hand, as well as a few more of the veggies. Thanks!

I would normally "third" the anchovies, but I just saw you have mostly non-meat guests. Here in Israel, corn is a very popular pizza topping; I had it the first time when it was the only thing available and was pleasantly surprised. Now I get it whenever I see it. It's really good with tuna or anchovies, or just by itself.

Ranch dressing,
blue cheese,
grilled chicken,
red onions,
mushrooms,
olives,
crisp bacon,
tons of garlic
and a pinch of red pepper flakes...

-spinach

-minced garlic, roasted garlic

-rosemary, basil, other herbs

-very thinly sliced vegetables like tomato, zucchini, eggplant

i like to keep my pizza simple so i can't think of anything else i'd add

remember to keep the sauce minimal...

Julienned sun-dried tomatoes, reconstituted in olive oil, are heaven on a pizza!

Coarsely chopped green olives add a nice tang, too.

fresh mozzarella, basil and tomato for a margherita pizza.

And a definite yes on the pineapple as an option.
