Muffins!

I have no idea why, but I got it in my head today that I wanted to make some Blueberry-Lemon muffins soon. Does anyone have a recipe that they like??

try finding a recipe for blueberry muffins--those are very easy to come across, and add some lemon zest, and maybe lemon extract or something like that.

Agreed. I'd also add some lemon juice to the wet ingredients.

I'd do a lemon poppyseed muffin and add blueberries.

Martha Stewart makes an awesome muffin with a struedel topping. I guess google the recipie? I've fiddled around with it and I add lemon zest and blueberries to the muffin and then drizzle a lemon glaze over the top.

Oh man I LOVE muffins! I actually contemplated starting my own muffin business and had a name picked out. I would still love to do that. I make them a lot to give as gifts.I never tried a blueberry / lemon combo though.

@perky & iz...hey you PA peeps-don't leave me out! I'm working on a shoofly muffin recipe-how's that sound? I'll ride my souped-up swiffer-i ditched my mop & broom ages ago. vroom, vroom!

@foodie - Sounds delightful! Bring it on sista! When the warranty runs out on my broom, I am planning to trading it in for the latest technology.

mmm... blueberry and lemon is such a wonderful combo. I love lemon with anything really. Lemon-strawberry, lemon-coconut and even lemon-chocolate chip (if you do it right).

@foodiemama........you've gone high-tech on us with your swifter swiffer. That microfiber is so much faster flying than straw and twisted cotton rope. Me & izatryt have to update, modernize and get with it. Will you give us lessons? My guess is, you could fly from Hbg faster to us than we could fly to each other. Here's the thing......I don't think CookiePie is a witch like us, but I'm just guessing. She could be a wiotch, but sounds too sweet for that. Let's invite her for muffins and coffee too, but she may have to take conventional transportation. That being the case, anybody is welcome cause we make magic muffins. Come on down, or across, as the case may be!!!!

I have overripe bananas, strawberries, blueberries and lemons. I am going to make some fusion muffins, trying different combinations. Wish I had some cream cheese to try those strawberry creme muffins Josdean mentioned. Maybe next time.

@foodiemama..........shoofly muffins, eh? On Father's Day, my BFF made gluten-free shoofly pie for her PA Dutch father. You never saw anything so ugly in your life (and she is a wonderful cook/baker). Oops - not her Dad, the pie! Luckily I brought my camera and had to shoot it. Again, not her Dad, the pie. Almost as a joke, we decided to taste it, even though most of the gooey part on top was charred black. It was outstanding! I have a new camera and need to read how to get the photos off and don't know how to post online. I just wish you could see that pitiful black pie, with broken crust. How did your shoofly muffins turn out? ;)

@perky-my muffins are still a work in progress. I'm trying to find a way to have just a small amt of shoofly pie-smaller than a mini-pie and muffins seemed a good idea. But I am a fan of the wet-bottom type and that is not translating so well to muffin/non crust form. the taste tests, while ugly ( I can totally relate to your BFF's attempt) have been tasty!

@emes1........I just browed a terrific website by our own Robyn Lee and lo and behold, there is a recipe for blueberry lemon mini muffins (the photo looks like......well, check it out, you'll see......made me laugh anyway - might be my dirty mind......haha).

How about lemon corn waffles with blueberry sauce? That's my project for this weekend. Hoping to make extra and freeze for easy eating on other days. I usually don't like lemon, preferring lime instead, but this sounded really good to me.

Well, the crack of noon has passed, the coffee is still hot and dozens of muffins with crisp tops and warm bottoms await. The fragrance of blueberries, lemons, strawberries and banana are wafting across PA. I've been stood up. Better go lay down.(as soon as I've et my fill). ;-)

@Perk - Sorry! I ran out of broom fuel and with the rising costs of said fuel, I had to walk back home. :-(
