Any suggestions for a tasty easy warm weather dinner?

Pasta prepared in any quick and easy way - spaghetti or pasta of choice anointed with with garlic slivers, carefully sauteed in best olive oil and sprinkled with freshly grated Parmesan or Asiago cheese is ready in a snap. This is light, quick and highly digestible - perfect for sizzling summer days.

I'm suffering right with you.... yesterday for a late lunch I had a vodka smoothie... fresh strawberries, blackberries, raspberries, and blueberries, some vodka, and lots of ice, threw everything in the blender and voila!

Oh you wanted food ideas... hmmm...is ice cream a food?

Last night my husband made a delicious steak salad -- mixed greens, tomatoes, carrots, cucumbers, sprouts and avocado, tossed with a light balsamic vinaigrette. He grilled a small flank steak on our little indoor stovetop grill -- it was heaven! Light and refreshing, but the steak gave it enough ooomph to be really satisfying.

ok here's my real contribution, I made this last week, it's fairly quick, tastes light and refreshing and I think it's a perfect meal for a hot day!

Pesto on pasta. Sure you have to cook the pasta but it requires no attention.

Fresh strawberries and whipped cream for dessert.

It was 100 over the weekend here but I live in Florida. So what happened today?? We had HAIL! Holy Hanna...

We had leftovers. Thank God microwave ovens don't heat up the house!

How about a cool soba noodle salad?

Hot days and nights call for spicy food! Tonight I am cooking up some spicy tacos, with cool avocado and lots of cold beer!

No ideas, none. It was 48 degrees when we went to lunch at 1:30.

Spicy vegetable stir fry is always nice - get that pan good and hot and you're done in a couple of minutes. Serve over rice from the Chinese food joint around the corner, if you're lazy like me!

It's been so hot here for the last week or so, the humidity is discusting. It's sad we are inside all winter then June comes and it's so humid all of a sudden. So I've been making salads and made some shrimp & avacado spring rolls with rice wrappers. Nice and cold, tomorrow maybe some grilled fish. The worse part is I cook in a restaurant and it will prob. be 90 or so in the kitchen for lunch service. Fun wow!!!!

I made a big salad for dinner tonight - leftover chicken breast, sundried tomatoes, marinated artichoke hearts, and mushrooms on a bed of lettuce and drizzled with olive oil and Parmesan cheese. It was light yet satisfying, and it didn't require a lot of work. Dessert was a handful of animal crackers dipped into a jar of Nutella, but that would have happened regardless of the weather!

I didn't have it last night but sometimes ice cream for dinner is all that will cut it in this weather.

Shred some chicken from the local rotisserie place over fresh tomatoes and spinach, dressed with some balsamic. Cool sliced watermelon for dessert.

If you have the time, poach a whole chicken: you'll need a large stockpot filled with about 6 quarts of water. Add a couple bay leaves, a tablespoon of black peppercorns, whatever fresh herbs you like and a tablespoon of sea salt. Bring it to a boil and add a 3-3.5 pound chicken (keep it submerged by putting a plate on it if necessary). Let simmer for about 15 minutes. Then turn off the burner and let the chicken sit for 3 hours in the hot liquid. At the end of the 3 hours, remove the chicken and let cool. Then shred the meat from the bones, discarding skin and fat.

The end result will be a cooked chicken that you can use for a variety of salads with minimal house heating. The leftover cooking liquid can be strained, cooled and frozen for use in less warm weather!

Gazpacho in the blender, or ceviche. Both are very easy to make.

Planning to make the following items:

* Chicken wings (broiled in toaster oven) with spices
* Cannellini beans and roasted red/yellow peppers salad
* Sauteed spinach and eringi (king oyster) salad with garlic

and a huge huge huge glass of water or seltzer :-)

My favorite simple summer meal is a grilled chicken paillard (marinated in lemon juice, olive oil, shallots, S, and P) topped with a salad of baby arugula, goat cheese, some halved baby heirloom tomatoes, and a light vinegarette. I put it on a pretty plate and have a glass of white wine, and it almost makes me forget how God-awful the heat is!

Granted, I've also been known to eat ice cream out of the container on the couch when it's too hot to cook...I am a classy lady.
