I need menu help...
I am having some friends for late lunch on Sunday. She is a vegetarian. Eats eggs, most cheese, and milk products. and an incredible sweet tooth.
We are all breakfast food fans.
I have fresh eggs galore. (My own chickens)
What is your best ideas for lunch?

How about a quiche and a fresh garden salad, I don't know if its hot where you live but here in western NY it hit 90 today and tonite it was salad for dinner.

Strawberry crepes- (Make the crepes ahead; fill right before serving with fresh semi-mashed berries and chilled whipped cream or ricotta, lightly sweetened; sprinkle with confectioner's sugar)

I served this with string beans vingarette, steam shrimp and croissants.
If shrimp will not do for your crowd, just steam some cauliflower or some fresh veggies and put them out. This was a killer brunch meal with mimosas and bloody marys.

Frittata! Best thing is that you can serve it hot, cold, or room temp. Make a few, with different ingredients.
That, a salad with whatever fresh greens exist, and you're done.
Well, there's dessert, if you want one. I'd seldom do dessert with lunch, but if you had some cookies or a light fruity thing -- maybe just fruit and cheese to nibble?

How about an English tea--cucumber sandwiches, egg and cress, scones, tiny cakes and cookies, strawberries, salads, and so forth.

Quiche, Frittata, or Strata -- All are delicious, easy, and easily-tailorable to veggie diets. Pair with a large green salad of some kind and a killer dessert, and I think your friends will be in heaven!

To drink, you need to serve a really nice refreshing punch... made with a non-alcoholic apple cider... It's awesomely good... it's nice enough for company, without being wine.
For lunch... how about some cheese and spinach-filled crepes... drizzled with some honey and almonds... superb!!
You could also make some frittata or quiches... I make mine wthout eggs, but you can get the flavor ideas.

O. my. word. I make killer asparagus. That sounds so good!!
And round out the meal with a strawberry shortcake if I can scrounge enough berries. otherwise maybe a friut and nut pancake....

I make my Capered Eggs for brunches that involve more than 3 people. I've never had a single leftover. Of course you can leave out the white truffle:
Capered Eggs with White Truffle Shavings
1 dozen hard-cooked eggs, halved
1 (or more) minced jalapeño pepper
2 cups mayonnaise
1 cup sour cream
1 teaspoon bittersweet or hot Spanish smoked paprika
1/3 cup salted capers, very well rinsed and chopped if large
1 tablespoon champagne vinegar
dash of cayenne pepper or red Tabasco sauce (optional)
1/4 cup chopped chives
1 tablespoon chopped flat-leaf parsley
2 teaspoons minced fresh dill
3-4 medium shallots, minced
sea salt
freshly ground white pepper
Plenty of croissants or brioche
1 medium white truffle
Heat the oven to 200 degrees. Arrange the egg halves, yolk side up, in a 9” x 13” baking dish. Top each egg with a bit of minced jalapeño, no more than 1/4 teaspoon.
Whisk together the mayonnaise, sour cream, paprika, capers, vinegar, cayenne pepper, chives, parsley, dill, shallots, salt, and pepper. Pour the mixture over the eggs.
Bake for 1 hour or until the dish is hot. Don’t let it boil. Serve with croissants or brioche. Just before serving, scatter the eggs with white truffle shavings.
Yield: 6 servings

Huevos Rancheros!
Tortillas filled with eggs, beans, and cheese. Take them up a notch with pan-friend chickpeas (You can do them right in with the eggs) and quinoa.
Then some yogurt with fruit, and maybe grnola.
