Grilled Shrimp, Scallops, and Pineapple
So excited! New grill parts arrive tomorrow and the tank will be filled. The first of many grilling sessions will begin. On the menu: tuna steaks, shrimp, scallops, veggies, and pineapples (always wanted to try it grilled). I wanted to hear your favorite ways of grilling Shrimp and Scallops, and even Pineapple. I've done rubs and salt and pepper, was thinking of trying something new. Maybe making a Cilantro Lime Butter or brushing the Scallops with Truffle Oil? Any ideas are greatly appreciated! Thanks everyone :)

My favourite way of grilling shrimp is making shrimp & sausage skewers. You can use any sausage - pork, turkey, chicken, spicy, mild, whatever you like. As usual, I brine the shrimp, and I also poach the sausage (if uncooked). Slice the sausage into 3/4 -1" pieces (go by the thickness of the shrimp you have), and arrange on the skewer (shrimp-sausage, shrimp-sausage, etc.) in such a way that the sausage slice is "sitting" inside of the shrimp curve. I often add pineapple and red/green bell pepper to these skewers between the shrimp/sausage parts, both for colour and for flavour. Once all skewers are assembled, I smother them with plum sauce (I'm sure you can use other sauces), and leave them in the fridge for a couple of hours (It just always so happens that I do this prep work several hours before dinnertime, but I don't see why you can't grill them right away). Grill and enjoy!

Yum! Grilled pineapple. I peel and core the pineapple and make 1/2" slices. I sprinkle with olive oil and add a little s&p. After grilling, I put them on a dish and dot with a little butter and cover with foil. I serve is as a side to seafood, fish and chicken dishes. If I serve it as a dessert, I use canola oil, grill, dot with butter and sprinkle with a mix of sugar and cinnamon and serve it with HD vanilla.

@Brooke29: Thanks! That sounds like a great idea-wouldn't have thought to pair shrimp with sausage. Never had sausage grilled. Souns delicious.
@izatryt: Ohhh. That sounds heavenly! And I have all ingredients-minus the HD. I do have Ben & Jerry's though-of course.

My first "girl" grilling adventure was marinated chicken tender pieces on skewers with cherry tomatoes. Easy and delish!
My second venture was butterflied shrimp stuffed with jack cheese and a thin slice of jalepeno, wrapped in bacon and skewered. It was super duper spicy but really good!

@Tara Tot: That sounds great! I don't think I would add that cheese though. I have an aversion to pepper jack. Unless you meant Monterey Jack Cheese, in which case-game on. Did you ever try Turkey Bacon?

@Butrflygirly - I can eat turkey bacon straight from the package (since it's cooked anyway), which never fails to draw comments from my other half. And no matter how many times I point at the line that says "fully cooked", he remains convinced that something is seriously wrong with me.

@Brooke29: That's funny. Whenever I can, I use Turkey Bacon-I can't see a difference really. But, I have never grilled with it (well, the BF never has). Was wondering if it grilled well.
The second roommate I ever had was like WTH is that stuff, when I was cooking with it once. I told her Turkey Bacon-she was hesitant but I got her to try it. She wound up liking it-but still prefers regular bacon. I found it funny-I thought everyone knew about turkey bacon.

I'd think Turkey Bacon should be fine when grilled. Of course, since it is cooked, you'd want to reduce grilling time as opposed to regular bacon, but I think it would actually work very nicely with shrimp, as you don't want to overcook shrimp anyway.
By the way, I usually use turkey sausage for the shrimp & sausage skewers, so I can tell you that shrimp and turkey are a lovely combination:-).

@Brooke29: Thank you for your help! I am also going to make your shrimp salad-tomorrow hopefully. I bought shrimp last time to make it, but I wound up making two kinds of GREAT Shrimp Stir Fry, one that was regular and one that included Oriental Noodles. Yummy.:)

Yes, I mean regular jack cheese - it may have even been mozzarella, it's been awhile since I made that. I like how turkey bacons gets really crunchy so I'm sure it would work fine.

Mmmm...Mozzie. That sounds like a good idea! Instead of slicing a jalepeno pepper (I don't really like the taste), I was thinking about maybe dashing hot sauce on the shrimp first (little s&p, maybe use seasoned salt), butterflying them, placing cheese in the ceneter, rolling them up with turkey bacon, and then grilling...
