DIY Kind Fruit + Nut bars?

I am smitten with the KIND bars I buy occasionally at Whole Foods, particularly the almond/coconut/apricot version. However, at roughly $2/each (if not more), these are an indulgence I can't, well, indulge in.

The ingredients are fairly simple--Almonds, apricots, honey, shredded coconut, coconut chips, glucose, puffed rice, chicory fiber, soy lecithin. Any tips or recipes to try and make these at home? I don't want to waste good ingredients by jumping in without insight from others!

I adore these bars... The macadamia + apricot ones are my hands down favorite... I am with you though... they are an indulgence that I would love to know how to make on my own...

My bf is obsessed with Lara bars, which I think are a ripoff for what they are - $1.29 for a small 1.6 ounce bar that is made simply of dates, nuts, and dried fruit (for example, the cherry pie bar is made solely of dates, unsweetened cherries, and almonds).

I made some a few weeks ago by putting a bag of dates (just the regular Dole kind from the supermarket) into the food processor and processing very well until it was a smooth (and very sticky) paste. I then added dried unsweetened cherries (about 1/2 as much as the amount of dates) and processed well until it was smooth. I then added about 2/3 as much almonds as dates and pulsed the mixture - you want the almonds to have texture. Transfer the mixture to a jelly roll pan and press it into a rectangle, then refrigerate - it's easier to cut the bars when they're cold. And there you have a homemade Lara bar.

This could easily be adapted to use any other kind of dried fruit, nut, and coconut (some of the Lara bars have coconut in them).

I've made Alton Brown's granola bars and they tasted good except they didn't stay together very well. But if you didn't mind them crumbling they were great. We found we really liked his granola.
