It's not a HUGE chain, but Bravo! Italian Cucina is tops on my list. We have relocated to the west coast, and Bravo! is the restaurant I miss the most.

For pho -- when we're in Hawaii, To Chau. In Cleveland, #1 Pho, because they have a decent bowl of pho, know how to fill an order (I abhor onions and cilantro), and serve other Vietnamese dishes.
For Korean food -- when we're in Hawaii, Sorabol. It's a 24-hour Korean restaurant. The food tastes great, the portions are served family style, service is brisk (there's a call button at each table), and the food is quick.
