What do I do with my fresh coconut?
I bought a fresh coconut on an impulse for $1. It has already been shelled and looks a little like a rocket--it's round at the bottom and comes up to a point at the top. Does it still have the milk inside? If so, how do I cut it open to get it? And then, what do I do with the fresh coconut? Can I just grate it an use it as I would dried coconut? I don't have a food processor--will it take me 3 years to grate it by hand?

I tried it a month ago when I too had a fresh coconut and wanted to do more than just eat it plain...and I wanted a sweet.
This cake is FABULOUS. Freezes great too.
I did not have buttermilk and used milk with some vinegar and lemon juice.
I also added some extra lemon juice and extract.
I used a different icing as well, but still a fluffy, creamy and not too sweet one.
Pound a couple holes with a hammer and nail to get the milk out. Then break into pieces and shell it before grating.
It has more moisture than the dried, and is not sweetened at all, so be sure to remember those things when trying to sub for the flaked.
Grate it with a food processor if you can, goes much faster.

Sounds like you bought a green coconut. These coconuts are for drinking and not for grating; the white meat inside is still too soft, although it is good to eat. The coconut water is high in electrolytes - excellent after a day in the sun or a night of partying. But they don't keep for long. Make an opening in the round part with a sharp knife and drink the liquid with a straw. It should taste refreshing, very lightly sweet. If not, it's because it's gone bad.
I don't recommend buying these coconuts in the markets here because they're not fresh - better to go to a country where they sell them fresh and cold to drink!!

@LadyMarmalade - I didn't know coconut milk was high in electrolytes. Thanks, now I know to stock up on some coconuts for the weekend ;)

I once had coconut milk in Chinatown. It was amazing for five minutes. Then it was the most horrible thing I had tasted. It's like tonic water. The after-taste is what turns you off.
