vegetables for breakfast

My son is on a diet where he can eat vegies only on certain days of the week. Any suggestions on breakfast?

Veggies only certain days of the week? That's a new one to me. :)

I like to load up my omelets with spinach, tomatoes, mushrooms, and onions - really, whatever leftover veggies I have around, I'll throw into an omelet or frittata for Saturday mornings.

I love a BLT for breakfast.

Grilled (broiled) tomatoes. Mmm Mmm Mmm.

I've completely thrown out my ideas of what breakfast should be the last couple years. I'm so much happier and eating better. Though I have to echo mrsbao here with the remark about veggies only on certain days of the week?

For instance, today I had Indian Samosas with peas, carrots, potatoes in the filling for the first meal. Sometimes I'll throw together a quick but yummy burrito with rice and beans by cooking up extra earlier in the week and those would be good for adding red bell pepper (as well as spicy hot pepper), onions, spinach or romaine, guacamole, tomatoes, etc. I also love to just nibble on the leftover roasted veggies from the night before, so much so I make more to be sure I'll have plenty for the next day. I think they even taste better as if the flavors have melded and deepened. Roasted asparagus, Brussels sprouts, cauliflower, onions, and more.

Maybe a savory corn waffle topped with a bunch of veggies and a complimentary sauce utilizing blended veggies? Or veggie filled crepes? Not sure how fancy you're willing to go...

I'd go with the standard veggie omlet - it has infinite varieties and flavors. It's what I had this morning :)

I love a good "California" scramble with spinach, shallots, tomatoes, and spinach. Sprinkle some sunflower seeds on top, slice half an avocado and put that on it and mmmm...heaven.

My stepmother, when she's in the same country as my dad half the year lol, makes breakfast for my dad that includes a salad. Last I recall when I visited them, breakfast is often shredded cabbage and tomato slices with a vinaigrette she makes; fresh-picked fruits from someone's yard (mango, lychee, papaya, etc.) or oranges, grapefruits, etc.; and yogurt that she makes.

This morning, my breakfast was a leftover lunch from the cafeteria yesterday: half sandwich with roast beef, alfalfa sprouts, portobello mushrooms, roasted red peppers, fresh mozzerella, tomatoes, and cucumbers, on country white bread, and a Thai curry soup (tomatoes, potatoes, celery, slivers of ginger, lemongrass, and bamboo shoots, coconut milk and lime in a Thai red curry base) I suppose he can drop the roast beef part. :P

You could do a vegetable tart---brush phyllo dough with olive oil and some S&P, then layer it with thinly sliced zucchini and tarragon sprigs, or tomatoes and basil....

And roasted brussels sprouts are delicious. Or even though it's kind of a winter dish, maple roasted carrots/parsnips.

I'm curious about this diet!

Please clarify as KtMc24 suggested. Are you asking for breakfast with veg, or veg-only breakfasts (no egg, no cheese, etc) ?

If it were me, I'd consider the sweeter vegetable puree soups (pear and parsnip, carrot and coriander, butternut squash), assuming a little fruit won't through off the diet. Those are easy to make ahead and simply reheat in the morning, if he's used to rushing out the door. Or something cooler, like a gazpacho or something with cucumbers (but maybe yogurt is out?).

Thanks for all the suggestions - I will pass along the diet if he has any success! It is a flushing your system type of thing, that has an unlimited vegetable soup. along with fruits or vegies.

In Israel, they thrive on vegetables for breakfast. They would always serve red peppers, tomatoes, and green peppers out by themselves, maybe with a little dip. I was always thinking to myself: where is the fruit?! But hey I got used to it.

I'd probably go the omelette route. Who doesn't love a good omelette with mushrooms, spinach, and tomatoes? Yum.

When I am on a diet I eat whatever I want that is on the diet any any time of the day. Make him his salad and let him figure out when he wants to eat it. How old is he?

I don't necessarily follow standard food patterns with my meals. I'm happy with cereal for dinner, a burger for breakfast, whatever.

In the summer, what I often eat is a cold vegetable stew I make which is embarassingly easy.

1 28 oz can Muir Glen Fire Roasted Crushed Tomatoes
1/2 bag Cascadian Farm Gardener's Blend
1/2 bag Cascadian Farm California Blend
2 cloves minced garlic
crushed red pepper, S & P to taste
Olive oil

Heat up the crushed tomatoes with the garlic and seasonings. Cook for about 5 minutes. Turn off heat. Add veggies. Let sit for about half an hour and throw in fridge.

To eat, just dole some out and drizzle with olive oil. It's easy, delicious and healthy.

I guess you could use all fresh veggies, but one of the reasons I like this so much is the ridiculously simple prep involved.
