Summer squash recipe
I've had shredded summer squash several times now and the only thing about it that I DON'T like is that I can't find a recipe for it! Anyone have one? It's usually with mashed potatoes and has a light flavor to it.

I've had it in restaurants and at banquets. Don't remember much about specific flavors in it, just that it was mellow tasting and yummy. I'd really like any recipe involving shredded summer squash though.

Cheesy Rice Burritos
I make this recipe also using summer squash instead of the asparragus.
