Mother's Day Menu
About twelve of us are gathering for a mother's day dinner next Sunday evening. We need suggestions for an easy menu.

Any sort of roast is good. Beef, ham, pork. It can be cooking away unattended, and then when it's done it can rest for a while before you cut it, so it's not a stressful item. As far as potatoes, veggies, and salad, that depends on the roast you choose, and what everyone likes. I'd probably do 2 veggies, just in case there are some who are pickier.

Here's the thing...Easy on the day of service is one thing. Easy in general is another.
You can do a lasagna - either traditional meat and cheese or vegetarian lasagna. This will require prep the day before but will be very easy on Mother's Day.
I also think a roast is a good idea. I like to do a turkey roast which involves boning a turkey breast and filling, then rolling it. Roast and accompany with any great potato and/or veggie dish, and a salad.
Any ideas for dessert? A trifle is incredibly easy and you can get a purchased cake (preferably from a bakery) to do the "cake" part. Make your favorite custard or pudding recipe for the cream part. Add nice seasonal fresh fruit and a huge bowl and you're there. (Whipping some cream with a dash of vanilla and a pinch of sugar will only make you a bigger hero.)
Get everyone involved to prepare a dish so all the work is not on one person.

Let the men know that they have to provide the food---either homemade or from somewhere where the food is good. No Mother should have to cook, clean-up or serve food on Mother's day. Other non Moms can be included in the assignment & it is okay to tell them what you want and/or from where.

For an easy meal, do ahead salads with a sliced meat platter, or a plate of shrimp with a dipping sauce, can be made ahead and service is simple. I like serving Sangria to a group or a choice of red and white. The German reislings are nice.
There is such a choice of salads - potato, pasta,bean etc. A deli-style meal is good and there is sure to be something to please everyone. If a hot meal is necessary, look to one main dish with a salad and rolls.

Mesquite slow-smoked brisket, cold salads and pitchers of margaritas. Chocolate cake.

What does Mom like? Are there Pops who can cook? Are you a Mom, too? Easy to me would be to have as much done ahead as possible, let the guys contribute to food and cooking as much as possible. Easy to me (for a large group) is picnic food (pulled pork, sausage, beer can chickens), or something large like a ham and/or turkey breast and lots of sides and a great dessert.
Coordinate the menu and let everyone contribute something.

I asked my Mom what she wanted. Pot Roast she said. So Pot Roast it is. That makes it easy for me to get busy with appetizers and sides. Here's my proposed menu.
Bacon Appetizers
Stuffed Mushrooms
Pot Roast with all the trimmings
Smashed potatoes
Mixed Green Salad
Tropical Lush Dessert
and for the kiddos Cooks Illustrated Thick & Chewy Chocolate Chip Cookies
Makes you want to come to my house for lunch Sunday huh?
