Mission - Mac 'n Cheese

So, I've been watching DDD alot and most recently I saw the "Like Mama Made" episode. The one thing that stuck out like a sore thumb that needs sucking, gnawing, and drooling on was the mac 'n cheese recipe from Sweetie Pie's. Having tracked it down here. We have this cheesy behemoth in the oven. I cannot wait to both shorten my lifespan and worship the porcelain god (lactose T__T) with this one. :D

You are a brave soul! I'm lactose intolerant and even though I could live on mac and cheese, homemade only thank you, I wont touch the stuff. Please let us know how it turns out, and have a serving for me!

Dear god it's so delicious. My stomach is officially *very* angry at me for - but it was TOTALLY worth it. :P

The M&C from Chat & Chew (highlighted on an ep of Sara Moulton's Cooking Live) is TDF. It's a zillion calories but unbelievably good.

A grotesque amount of cheese and butter fat piled atop innocent macaroni noodles swimming in a milk and egg mixture - I wasn't totally convinced the whole mixture would fit in a 9x13 to begin with, but it finally all did (barely).

Forty-five minutes in the oven later, I was rewarded with a chewy, cheesy, totally rich and delicious mac 'n cheese. My dinner guest and I enjoyed it immensely and my roommate (despite having just had dinner) made room for a serving as well. I'm taking a big batch of it to work tomorrow to feed more people.

ok its official I'm jealous! maybe its time to try the soy cheese again :(

My Deep Fried Mac & Chz might as well add injury to insult, or is that how the saying goes? And you only thought the Mac & Chz part was killing you, or lactose, but lets fry it too!

I can't get to the recipe, can you paste it for me here? It sounds great!

1 pound elbow macaroni pasta

1 cup whole milk

Two 12-ounce cans evaporated milk

3 eggs

2 sticks butter, cut into small pieces

1/2 pound colby cheese, shredded

1/2 pound Monterey Jack cheese, shredded

1/2 pound sharp Cheddar cheese, shredded

1 pound Velveeta cheese, cut into small chunks

Salt, to taste

1 tablespoon white pepper

1 tablespoon sugar

1 cup shredded American or mild Cheddar cheese

Preheat oven to 350 F.

Bring a large pot of lightly salted water to a boil. Cook pasta according to package directions. Drain and transfer the pasta to a 9-by-13-inch casserole dish. Set aside.

In a large bowl, combine the whole milk, evaporated milk and eggs. Mix with a fork until thoroughly combined.

Add the butter and colby, Monterey Jack, sharp Cheddar and Velveeta cheeses to the pasta.

Pour the milk and egg mixture over the pasta. Season with salt, pepper and sugar and toss. Sprinkle the top of the pasta with the remaining cup of American or Cheddar cheese.

Bake for 30 to 45 minutes, or until the top is lightly browned.

I wonder if you could just replace the Velveeta with more of the other three cheeses (since Velveeta is just colby jack and cheddar with added emulsifiers), maybe with an extra egg to make up for the lack of emulsifiers?

Hrm. Definitely going to be a "must try" on the meal plan next week!

I gotta say the processed Velveeta added the gooey, sticky part of the mac 'n cheese. Even my processed food hating self had to given into the siren song of the chemicals for the added creamy.

That being said, if you figure a way to cut out the ultra processed Vel I'm all on board. The sugar totally wasn't necessary and I was somewhat perplexed as to it's addition. I'd totally add dried mustard powder and perhaps some smoked paprika next time. Added oomph.

Thanks feriorrenna, just got home from work and I'm going back out to get the ingredients to make it tomorrow! WOW, all that cheese, it sounds awesome!

Yummm, homemade mac and cheese is one of my weaknesses.
