Lactose-free chocolate cake
My friends and I are having a potluck and I really want to make a chocolate cake, but unfortunately one of them is lactose intolerant. She usually just forgoes dessert, but I really want her to be able to have some. Does anyone have a good lactose free chocolate cake recipe?

There's been a recipe around for ages that is called "wacky cake" with cocoa and vegetable oil and vinegar (among other things) . I've made it many times. You can go to Cooks.com and search for it. I'd frost it with a fluffy white icing, like a 7-minute or White Mountain frosting, both made with egg whites and sugar. Very easy for a lactose-free diet.

You know, I'm not sure where it is, but I'm sure you can find it online...my grandmother used to make a chocolate cake made with cocoa and mayonnaise, of all things. It was tender and fluffy and fabulous. Hope that helps!

I made a dark chocolate cake from Fine Cooking that was very good. I used an orange-flavored olive oil .... added a lovely subtle flavor.

Why not just use lactose-free milk? Substitute any real dairy butter, too, obviously. And make sure the chocolate you use in the recipe does not contain any milk products.

look for a recipe for the queen of sheba chocolate cake. if you need one let me know. it's all over the internet and really delish. also its almost flourless, too. so only 1/2 cup.. i have a friend who is allergic to gluten and i used rice flour. came out great but i'm trying potato starch next. you can email me at xyz1234@tampabay.rr.com

I've been lactose intolerant since I was 11, so Iactaid milk was a GODSEND to me when it first came out. It is extremely easy to substitute recipes with lactose-free products. Butter can be more difficult, but there are some margarines with no milk in them, you just have to really read the ingredients. Or, you can use oil.
