How much ham?...

How much ham do I need to buy to feed 18+ people?? (and hoping for a little left-overs!) :o)

I am making a ham/mac&cheese/salad/etc. meal for mother's day and I have the rest down, I'm just not sure what size (or how many?) ham to buy?!

Well, the "etc." has a lot to do with it. The general rule is that a serving is 3-4 oz of boneless meat. Some will eat more some less. Frankly, for that big a group, I'd buy the biggest ham I could find, and I'd also lean toward a pre-sliced one for my own convenience, as well as that of the guests. Certainly more sides mean less need for the ham.

when people ask me how much meat they need i usually tell them if it has a bone in it you need to figure a half pound per person, that usually leaves some for leftovers, especially with all the "etc".....if you go the boneless route i suggest 4 to 6 oz per person...and if you go the presliced ham be careful when heating it up.....wrap the ham in aluminium foil so the slices dont dry out

I've noticed that most ham companies have serving estimates (like "a quarter ham will serve 6 to 8" etc.) .

Some people are a stickler for serving real country hams, but that preparation involves rinsing, soaking, some even parboil to remove the salt, and then baking and glazing.

Others (like my family) order from the Honey Baked Ham company. We (ok, ok, my mom) used to do the whole country ham rigamaroll, but she's not up to it anymore and frankly none of us have the chops. We don't reheat it because it doesn't need it, it's fully cooked and glazed. We just let it come to almost room temp and serve. My family and I love it. There are imposters and some are NOT good at all.

BTW--I checked on your menu on the other post. I am very interested in the Hawaiian White Mac Lace Cookies. I'm assuming "Mac" is macadamia. Would you share the recipe for the cookies? My husband has been hankerin' for his Grandma Bessie's Lace Cookies, but she's deceased and no one seems to know the recipe. Instead of trying to recreate something that's on a pedestal, I've been trying to find a new lace cookie recipe that he might like.

Here's the recipe. I'm happy to share! I'd love to hear how you like them, if you get around to making them! These are not traditional lace cookies by any means... they are a variation on an old Hawaiian Oatmeal cookie recipe of my grandmas, and they just remind me of a lace cookie. They are very thin and fragile, and are a nice balance of chewy, crisp and buttery!! :o)

Hawaiian White Mac Lace Cookies

ingredients:
1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
1 tsp vanilla
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 cups old-fashioned rolled oats
2 cups sweetened flaked coconut
2 cups + 2 tablespoons flour
1/2 cup coarsly chopped good white chocolate
1/2 chopped macadamia nuts

directions:
1. Preheat your oven to 375degrees F.

2. Cream together the sugars and butter. Mix in the eggs, vanilla, salt, soda and powder until well blended. Mix in the oats, coconut and flour, white chocolate and mac nuts.

3. Drop by small (1-inch) scoopfuls, spaced about 2-3 inches apart, onto a baking sheet lined with parchment paper, as they will spread quite a bit during baking. Bake for about 10-12 minutes, or until they are light golden brown around the edges.

4. Remove from the oven and let cool on the baking sheet for about 5 minutes, and then carefully transfer to a cooling rack to finish cooling! Enjoy!! (These cookies freeze really well!)
