Hot weather food
We're on the tail end of a heat wave in the Bay Area and looking for dinner ideas that are balanced (we eat more veg and protein and less carb) and that minimize or eliminate the use of the stove, oven, grill (because we only have indoor) and other elements that heat up. We are not big fans of salad but those ideas are welcome too. Thanks!

This is a salad recipe, but it's very filling and isn't the ordinary, add-protein-to-lettuce salad. I serve it as a main dish, and it's very nice on a hot day.
Cabbage Chicken Salad
(needs to marinate at least 8 hours for best flavor)
1 small green cabbage, chopped (not shredded)
Mix in a little red cabbage for color
3 or 4 cooked chicken breasts, shredded
1 package sliced almonds
1 package crunchy chow mein noodles
Dressing:
6 tablespoons white vinegar
1 tablespoon salt
1 1/2 cup vegetable oil
1 tablespoon pepper
5 tablespoons sugar
Mix cabbage and chicken in a LARGE bowl. Mix dressing in a cruet and shake well. Pour dressing over cabbage mixture and stir well. Cover, refrigerate and marinate overnight, or make in the morning for dinner. Stir occasionally (if you happen to sleepwalk!). Just before serving, stir well, then stir in chow mein noodles and almonds.

Not much help for today (unless you used canned though if you have a pressure cooker those are quick) but making up a batch of beans when cooler then freezing in serving sizes is great for quick, healthy and cool dinners. Anything from bean and rice burritos (quick quesadillas too), to soups, dips (hummus and more), dals, even falafel, and a variety of cold bean salads. Filling, satisfying and still cool.
You can roast veggies ahead of time too for composing meals later.
I also love roll up sandwiches. Spread hummus (or other bean dip) on a tortilla of choice and add some bell pepper, cucumber, shredded carrot, greens, sprouts, etc (sprinkle on some nuts/seeds -- I like walnuts and toasted flax), maybe add flavored oil drizzles, tahini and chili sauce for pep, and roll. Can cut into pinwheels or eat as a burrito.

Rotisserie chicken, potato salad, coleslaw, and fruit salad. Baguette.
You can get a small charcoal grill for under twenty dollars:
Corn on the cob, tomatoes, cucumbers with red onion salad. You could grill sausages or burgers.
Your favorite steak grilled with onions, peppers & mushrooms, on a fresh hoagie roll. Broccoli, carrot, raisin salad.
Any excuse for a sandwich or panini. Lots of Claussen kosher dill pickles or some salty queen green olives.
My daughter eats raw foods - vegetables and fruit and grains and is very creative and never bored.

Ceviche if you can get good-quality fish. Nothing more refreshing!
Also, vietnamese noodle salads or summer rolls with shrimp are always light and delicious.
