Graduation Party
Graduation is coming up quickly, and I am wondering what ideas people have for foods. graduation party is in an open house format, with people coming and going as they can. my mom and i were thinking of doing a taco bar, with fixings set out for people to make and eat as they please.
Any ideas would be appreciated! Thanks!

Sounds like you have it mostly figured out already. It'd be nice to have both hard and soft taco shells.
Otherwise, you could also do some other finger foods like sliders or mini egg rolls.
Cream puffs would also probably work well for dessert.

oo taco bar sounds fun, i've been dreaming of hosting one one of these days...fresh guacamole would sound like a must! i also like putting out fresh fruit for people to munch on...you could continue the theme and squeeze lime juice on the fruit then sprinkle with chili powder (works really well on papayas). and i love mexican grilled corn - topped with butter, lime/lemon juice, chili powder and cotija cheese - soo yum! and congrats on the graduation!

my friend did a pasta bar with 3 kinds of pasta: penne, bowties and linguine; and 3 sauces in crock pots. red sauce with no meat. a really meaty red sauce with meatballs and a white sauce. accompanyments were salad, garlic bread, parmesian cheese... the usual suspects.

A taco bar w/ fresh guacomole sounds awesome. I would try to have a wide assortment of fillings ie grilled chicken, shrimp, steak, ground beef, mahi mahi, beans or tofu for vegetarians, grated cheese. Make a variety of fresh salsas, maybe pineapple salsa or salsa verde. Sides can include jicima slaw, mexican rice, black beans, tortilla chips. Drinks- margaritas, coronas, sangria. Sounds yummy.

If you want a really yummy hot appetizer while the taco bar is being assembled, take puff pastry and wrap it around little savory bites of the different fillings--instant empanaditas, and people get to sample the various filling choices before committing to what they want on their taco. The empanaditas bake up in a flash and stay pretty good and warm in a towel-lined basket. Perfect two-bite snacks.
