Gorgonzola Equivalent?

I'm making an Italian sauce that calls for Gorgonzola but I can't find it .... what kind of cheese could I use as a substitute?

Hmm.. nothing really tastes the same to me; but if you HAVE to substitute it's kind-of got similar blue cheese flavours? Blue cheese is less floral to me than gorgonzola so it might not work without the real deal. It also might depend what you're putting the sauce on? Hope that helps!

Danish Blue is much stronger, IMHO.
Rocquefort, more expensive.
Maytag Blue, domestic blue, milder, I guess.
I know Costco has Gorgonzola as well as the Danish Blue.
Trader Joe's has Gorgonzola as well as a TJ blue cheese, which is a bargain with ok blue flavor.

Can't really think of anything other than:

Roquefort
Stilton
Blue Cheese (Maytag Blue)

Also watch out - some recipes call for Gorgonzola Dolce which is less sharp than Mountain Gorgonzola.

I've seen goat cheese with blue veins which might be a nice sub for gorgonzola dolce.

Most every chain carries some form of gorgonzola...wonder why you can't dind it? Where are you?

As far as texture goes, maybe feta? Plus, feta just tastes awesome, so why not! :)

The variables here are so...varied...
It really does depend on what you are using the sauce with, the ripeness of your cheese and your ability to find product.
I would go with a blend of Taleggio and whatever blue you can get--I prefer the Spanish blues over the French.

Spanish cabrales is the only cheese that has a similar flavor and that soft, creamy texture that I can think of at the moment. Gorgonzola is not "flaky."

just curious where you are that you can't get gorgonzola.

Any sort of blue cheese will probably be fine.
