Fiddleheads - what do I do with them?

I finally went and bought fiddleheads. They are in season in southern Ontario right now, but I have no idea what to do with them, so I only bought around a cup and a half. If they're good today, I'll definitely buy some tomorrow too. Any recipes would be greatly appreciated by the very entertaining and knowledgeable SE readers/crew!

My fave is to have them in pasta with a really light white wine cream sauce with a bit of parm or asiago cheese on/in it. I like it with a bit of crushed red pepper, black pepper and sometimes a dash of lemon juice too. Yum.
(Lemon can discolor the ferns though..I sprinkle it on the finished dish rather than add it in so that is avoided.)

Oh I love fiddle heads!

I like to do a warm salad:
After steaming them with some fresh green beans, I sautee some red onion and garlic, add some cider vinegar to deglaze, combine the pan mixture and the steamed fiddle heads and beans in a bowl with some chopped fresh parsley (lots of parsley works in this) then finish with some slivered and pan-toasted almonds and a good splash of EVOO! Mmmmm...so simple, and super easy.

Steam them until the colour is bright and they are tender-crisp. Toss a bit of butter (or olive oil) and squeeze some lemon juice (or vinegar). Serve as a vegetable side with any meal.

We use to pick them in the boggy fields of New Brunswick as a child and I"m glad to see they're around here in Ottawa as well.

Enjoy - they are divine.

Amazon Goddess' recommendation is a T&T New Hampshire tradition with fiddleheads. Kudos to you that you were able to get them! They never make their way down here to FL, at least not to my knowledge :(
