Cranberry sauce
Hi everyone. Can anyone give me some suggestions on what to do with left over cranberry sauce? The whole berry, in a can kind. I had some with my pork chops the other night, but now, I have no idea what else I can do with them.

You could adapt a cranberry upside-down cake recipe. Most I have seen use fresh cranberries but then cook them down a bit to make a sauce. There are a couple of recipes on the Food Network site here and here.

Roast a turkey, make some stuffing. Let cool. Make a sandwich with great fresh bread, mayo, turkey, stuffing and cranberry sauce. Eat and enjoy.
Or, were you looking for something a little faster? ;-)

Carmelize some red onions, add cranberry stuff and maybe a dab of mustard or horseradish and seve with grilled or roast chicken....?

Use it as an ice cream topping. Works with peanut butter on a sandwich. Send it to my house - Mr. Meatloaf adores it in any form.

I sometimes use whole cranberry sauce it as a base for a fruit salad/fruit cup to be served as dessert. Add lots of fresh fruit. Garnish with mint. Great with a gingersnap!

Put it on crackers with a nice soft cheese as an appetizer, or wrap up the same in puff pastry and bake til golden and buttery. Yum.
Fold into almost any cake/muffin/quick bread recipe (could add nuts, orange zest etc. too) for a treat.
Or put into Jello...really yummy in the sparkling kind.
Do a roulade of pork or chicken with the cranberry as the filling. Can freeze and cook later if you want.
I do have to second Perky Mac's idea though....Despite the time of year, I would be craving roasted turkey if there was cranberry anything around!

roast a chicken and when it's almost done,glaze it with the cranberry sauce.....maybe mix a little hot sauce in the cranberry sauce first !!!

i use it on a party dip... granted, I prefer the home-made kind of cranberry sauce, but i think it will work just the same.

Here's a recipe for Glazed Cranberry Sauce Muffins
(from The Impatient Baker)
2 eggs
1 ¼ cups cranberry sauce
¼ cup sugar
2 teaspoons vanilla extract
2/3 cup canola or vegetable oil
2 teaspoons baking powder
½ teaspoon salt
2 cups flour
1 ¼ cups white chocolate chips
glaze-
1 ½ cups confectioners’ sugar
3 tablespoons warm milk
Preheat the oven to 375 degrees. Whisk the eggs. Add the cranberry sauce, sugar, vanilla, and oil to the bowl and whisk until everything is well blended.
Sift the flour, baking soda, and salt over the bowl and pour in the chips. Gently fold until the flour just disappears (the batter will be lumpy – be sure not to over-mix or muffins will be tough and flat).
Use a quarter-cup measure to spoon the batter into the muffin cups. Bake for 20 minutes, or until the muffins are brown around the edges and begin to turn brown on top. Top with the glaze when the muffins have cooled off. To make the glaze, whisk together the confectioners’ sugar and milk in a small bowl until smooth (add more milk if too stiff, more sugar if too runny). Dip the tops of the muffins into the sugar.

I'd like to add to the cracker/cream cheese idea above: add a piece of turkey or chicken in between the cream cheese and cranberry sauce. Yummy, filling appetizer! Especially if that turkey was fried or smoked...
