Can you freeze whipped frosting or Cake batter?

I have a great whipped frosting recipe. However, it makes way more frosting than what I need. Can I freeze the excess to use for later? How about freezing cake batter - Is that okay?

You can freeze frosting -- it might deflate it somewhat but whip it again once defrosted and it should be ok. On cake batter, I doubt it would freeze well. But why bother? Just bake the cake and freeze that. Baked off and well wrapped, cakes freeze well.

Is the frosting based on egg whites or whipped cream? Those won't freeze too well. Buttercream frostings will.

Hmm. I don't think that an Italian or Swiss buttercream could withstand freezing. Most American buttercream recipes hold up okay.

I don't think you'll be able to freeze cake batter. You can bake the layers and freeze the cakes, though. Just wrap them very tightly.

Make sure you pull the cakes out and let them thaw in their wrappers. That way, the wrappers take most of the condensation, rather than the cake doing so.

Kit, did $34,000 worth of decorated cakes from my home last year. My experience----you can freeze pretty much any frosting----whipped, buttercream, Euro meringue buttercream. You can even freeze stablized whipped cream. Cake batter will keep in the frig for up to 10 days if frig is really cold. A "busy" frig---3-4 days. A freshly baked cake, tightly wrapped will freeze well for up to 3 months---depending on recipe. Hope this helps. Ask Cookey
