Burger + Cheese = ??????

Does the burger make the cheese, or does the cheese make the burger? With all of the amazing cheeses available to us, what is your must have cheese on your burger?

I think it's a combination of the right beef, cooked correctly, paired with the right cheeses.

I'll take a 1/2 lb of ground sirloin, medium rare, with a slice each of meunster and provolone, topped with Hellman's, yellow mustard, chopped green olive, romaine lettuce and sliced ripe tomato, on a toasted or grilled kaiser roll.

Oh geez. Here comes the yellow mustard again.

No amount or type of cheese can compensate for a lousy burger.

You know what, much as I love my cheese (and believe me, I could live on cheese, fruit and wine, which is pretty much what I do when my husband is away on business), I believe that a perfect juicy burger requires no cheese at all (yes, I know, this and my love for ketchup on hot dogs will be the reason I'll end up in hell. Oh well). In fact, a perfect juicy burger requires very little - salt and pepper, and a bit of ketchup. At times, maybe - a thin red onion slice and a tomato slice, but that's it.

hamburger can get Hunter's cheddar-but not too thick-or nothing if it is perfect
turkeyburger must get get Cabot pepperjack

I never order cheese with my burger. What always gets me is that I order a "HAMburger" and yet I always get asked what kind of cheese I want. If I wanted a cheeseburger, I would have ordered a CHEESEburger. ARGH!

A burger (beef or boca) with just swiss cheese and A1 sauce! If you can handle stepping out of your normal burger fix-up, you will enjoy this once in a while! Yummy!!

my recurring hindu guilt (lol) prevents me from eating hamburgers more than 1-2 times a year, so when I do eat them, it's 1/2 pound patties with s&p, and caramelized onions and mushrooms. I'm not a big fan of cheese on burgers because the processed stuff feels like plastic, and the expensive real stuff is not worth putting on the meat, I'd rather enjoy it on its own, or where it takes ore of a front role.

for the rest of the bbq season, we have these homemade chicken/pork hybrid burgers with chile, garlic, and s&p seasoned patties. glaze with hot sauce (I use tony roma's) during the last few minutes, and serve with bacon and blue cheese. this is where the cheese has a chance to shine.

I think cheese can help with a less than great burger (provide moisture and flavor), but it can put a good burger over the top. My favorite cheese for a burger is Saga Blue (like brie, but inoculated with the mold for blue cheese). It is particularly stellar with a little mustard and mayo and either fresh tomato or sauteed mushrooms and onions on the burger.

Freshly ground chuck - it's so easy to grind your own....try it...you'll never go back....I do it in my little food processor....cutting a chuck steak or roast into cubes & grinding alittle at a time.
Cooked medium rare - served on a kaiser roll w/thousand island dressing, carmelized onions and horseradish cheddar. I know what I'm making this week-end!
I think a good burger & good cheese should compliment each other...neither overshadowing the other.

There's not much that can help a poorly prepared burger. Having said that, I guess I'd have to go with Swiss, or Blue, or sharp cheddar or...

The cheese makes the burger. I can't have a regular burger. I NEED cheese. But it depends on the type of burger what type of cheese.

If it's a bacon cheeseburger (what could be better?) it can be american, provolone, sharp cheddar, blue cheese, or monterey jack.

If it's bbq cheeseburger (bacon optional) must be sharp cheddar. No mayo goes on this one.

Regular Cheeseburger-american, monterey jack, munster, or provolone.

Oh yea-toasted bun, ketchup, mayo, romaine, bread & butter pickles (burger slices), on a grilled medium well patty (50/50 sirloin/chuck mix).

I will ONLY get a CHEESEburger (I totally hear you, @Cassaendra) if it's good sharp cheddar, I think American cheese ruins a good burger. After years of eating plain hamburgers because I was lactose intolerant, I do enjoy a big slice of cheese with my burger, and some carmelized onions, and some bacon, and some YELLOW MUSTARD and pickles and ketchup and tomato and lettuce.

And a sesame seed bun.

If it's a real burger, with super fresh meat and cooked on the grill, it needs no cheese to make me happy. In fact, I think real burgers are better without it.

Now if we're talking about dry fast food burger pucks, I'll be requesting the works.

MMMMM.....pepper jack.... With guac.

Or bleu cheese and grilled onion.

Or dill havarti with cucumber slices for crunch...try it, you'll like it.

Or feta and tzatziki sauce with heirloom tomato slices.

I want a burger right now!

Yesterday was so harrowing (ran out of gas, discovered my cell phone was dead, trekked 2 miles for gas and back to the car, and for the first time this week yesterday was sunny and warm, so now I have funny tan lines and blisters on my heels) that when I got home, I headed straight for the shower. When DH arrived, I was passed out on the sofa, no lights, no dinner.

So he picked up some ground bison and some rolls. Fantastic. We know bison is leaner, so we were careful to not overcook 'em. Came out a lovely MR. Then we slapped on some Hellman's, a touch of dijon, more pepper (the patties were already s&p'ed) and the thinnest slices of some Vermont Extra Sharp Cheddar that I could manage.

While DH was at the store, I managed to peel myself off the sofa and start some sweet potato fries.

I had mine with 2 Claussen Hearty Garlic Spears and a beer. And a gallon of water.

Well when I do have cheese on my burger, I prefer cheddar.

If I'm in the mood for a melty cheese, I actually like Brie on a burger. If I'm in the mood to be punched in the mouth by the cheese, I'll opt for Bleu. If I'm waving a flag (feeling a bit "Americana"), I'll have a nice slice (slab?) of cheddar and run that under the broiler.

I like to take a burger, put blue cheese, crumbled bacon and caramelized onions on it, top it with another burger, press the edges closed and toss it on the grill. Get a little sear going and voila! (Being careful with the hair these days ;-D)

I don't care of I have cheese on it or not. Any cheese but bleu cheese.

It must have onions. If I have grilled onions I don't need anything else on it.
I like jalapenos or pickles or both. Tomatoes. Lettuce optional.
Yellow mustard or mustard and ketchup.
Barbecue sauce- cheddar or American cheese onions and pickles and/or jalapenos required with bbq sauce.

If I put on guacamole nothing else is required.

Paula Dean made a good burger on one of her shows a couple years back. It was cooked on the stove with caramelized onions, american cheese and a fried egg. Then she took the assembled burgers and stuck them on the still-hot pan (she wiped out the grease ... imagine that!!) and toasted/flipped them. I always made my burgers like that! SO hot and delicious!
