Beaucoup Puff Pastry
I have two packages of puff pastry in my freezer and I have run out of ideas of what to do with it. What would you do with that much puff pastry?

What wouldn't I do?? :)
*Wrap salmon, dill and lemon rice, hardboiled egg and some chopped cooked spinach in it and bake til golden (brush with butter)
*Make chicken, turkey or beef mince patties with onions and seasonings etc and cook. Wrap in pastry squares and twist the tops like a present and bake.
*Roll a good spicy sausage up in it and bake.
*Wrap a soft cheese in it. Brie and berries are good, or bleu with walnuts etc. Serve like an appetizer.
*Wrap steamed veggies and cheese in it.
*Bake in sheets and make napoleons with custard and fruit. (Or ice cream!)
*Cut out shapes with a cookie cutter and use as a cute topper for a dessert/ice cream etc.
*Resist the temptation to bake and eat the buttery goodness plain! ;)

Palmiers!

Palmiers are good sweet and savory. Bake a brie. Or better yet make Brie bites with a mini muffin pan. Squares of the puff pastry then chunk O Brie. egg wash and free in the pan. When they are good and solid put them in a zip bag and when your company comes put them back in the mini muffin pan and bake them from frozen. MMMMMM

Just last night, I made the best little dinner. Wrapped chicken breast and brie with apricot jam in puff pasty and brushed with a little egg...yummy, yummy. But one could do pork loin and sour cherry, chicken with mozzarella and sundried tomato, greek-style with spinach and onion and feta, or dessert-style with pears and candied walnuts and Stilton (or other blue cheese). I'd be stoked to have that much puff pastry in my fridge...as would my daughter, because I'd have to play with her at the park for hours to work off all that buttery, doughy goodness!

for fourth of july last year i made mini pocket pies using puff pastry - baked apples and blueberries spooned into a circle of pastry, fold the pastry over and seal the edges with some water or egg yolk, bake and then sprinkle with cinnamon sugar and serve with vanilla ice cream - they disappeared as fast as i could make them :)

You could use it as the base of a roasted veggie tart topped with melted fontina cheese!
Also, if you have any sort of leftover beef or chicken stews (or even seafood) you could use some of it to be the crusty topping of a pot pie.
Cut into squares and fill with your favorite jam or preserves (or Nutella!) and make turnovers.
Cut into squares and fill with a mixture of cream cheese, crab, scallions and a little curry powder and you'd have a really decadent take on a crab rangoon!
