Yellow food
I'm planning on making something yellow for the Livestrong Day Competition but my uncreative brain is sort of at a loss so I need your help...what can I make that will be appetizing and bright yellow?
In terms of ingredients, I can think of yellow pepper, yellow squash, bananas, pineapple, lemon curd, but I'm not yet inspired. What can you think of?? Thanks in advance!

Turmeric, e.g., Thai or Chinese-style yellow curry.
Saffron rice.
Yellow tomatoes.
Corn.
Golden beets.
Yukon golds.
Yellow crookneck squash.
Hollandaise.
Scrambled eggs.
Edible flowers for garnish (marigolds, etc.)
Lemon pound cake.
Egg custard.
Just for starters.
P.S., bananas will only work as a centerpiece. Once made edible (i.e., by peeling), they're no longer yellow.

Anything with a significant amount of turmeric will be yellow. This is where much of the distinctive color of curries comes from. Saffron also tends to tint things yellow.
Lots of split legumes are yellowish also: yellow split peas, moong dal, split chickpeas, and even red lentils turn a pale orange when cooked. You could do a dal seasoned with turmeric, among other things.

lemon sorbet?
I just got this recipe from my SIL and it is delicious and bright yellow: She made it for lunch this past weekend.
Baked Corn
1 can (14.75 oz) creamed style corn
1/2 cup milk
2 slightly beaten eggs
1/2 cup Jiffy corn muffin mix
1 small pureed onion (she used powdered onion - don't know how much)
2 Tbl. sugar
1 stick melted butter
Mix all ingredients except butter. Pour into greased baking dish and pour melted butter on top. Bake until firm at 350 for about 45 minutes.
If I saw that recipe, I probably would skip it, but it tasted like a divine corn souffle, I swear. I'd go easy on the onion because I didn't taste it and it didn't need anything. Let me know if you try it......anyone!

Saffron Rice Salad! This is one of my favorite dishes. The long-cooked onions are scrumptious and the yellow-tinted rice is outstanding. Besides, it's one of the few non-risotto rice dishes I can actually make...LOL. It's incredible.
There's an Indian yogurt-y dish that's glow in the dark yellow but I can't think of it. How about yellow dal?

I think most of my ideas are taken but the strongest colour changer ingredients in my books are: turmeric, edible flowers, food colouring (though very unnatural), polenta and sweet corn. Maybe a corn-bread? That could be fun

Butternut squash soup can turn out a nice golden yellow, although I've seen some versions that are more of a muted orange.
There are lots of ways you could decorate lemon cupcakes with yellow frosting and/or assorted yellow candies.
Lemon meringue pie is really yellow but comes up a little short in the "different" department. A shaker lemon pie (made from slices of lemon) is not very common and is, in my opinion, an interesting and visually appealing pie. Two caveats: macerate the lemons and slice them paper thin.
Lastly, a bombe made from lemon ice cream, sherbet, etc. might make a nice visual. I'm drawing a blank as to what you would fill it with after lining the pan with the ice cream.

My granddaughter says "lellow". I have to chuckle. I was thinking deviled eggs as I was reading the posts. Thank you @Mels for making sure I didn't forget on the way down here.
How about Mango salsa. You don't have to keep it hot and it won't melt.
