White Chocolate HELP!
:o) I have a husband who LOVES white chocolate, a cupboard full of good white chocolate, and really can't think of what to use it in, besides white chocolate macadamia cookies! Anybody have any good ideas?? I am a baker, so difficulty is not an issue (although simple is always best, right?)... I am more concerned with finding things that people have tried and love (5 start recipes!) so I can surprise my husband with new treats! :o)

It's not baked, but I recently made a cool recipe for white chocolate yogurt mousse with passionfruit gelee on top. You could use your choice of fruit for the jelly, but it was a good, light dessert, and the white chocolate definitely comes through. If that sounds interesting to you, let me know and I'll post the recipe.

@renzata - that sounds amazing!! Passionfruit is one of my all-time favorite things (though I rarely know how to use it!), and combining our 2 favorite things sounds wonderful... I would love the recipe! :o) Thank you!!

Well ok, then. The good thing about this recipe is that you can use the frozen passionfruit puree (I can find it at Wal-Mart in my area, but depending on where you lie, you might want to find a Hispanic grocer).
Recipe is from Anya von Bremzen, The New Spanish Table
2 cups plain whole milk yogurt (I actually used 2% because I couldn't find whole)
7-8 ounces white chocolate, finely chopped
1/4 cup cream
1 envelop unflavored gelatin (2 1/4 tsp)
1 cup thawed frozen passionfruit puree or fresh strained passionfruit juice
1/3 - 1/2 cup sugar
Set a sieve over a bowl and line with cheesecloth or a coffee filter (I use a filter). Place the yogurt in the siee and let drain about 2 hours.
Place white chocolate and cream in top of a double boiler over simmering water. Stir until completely melted, then remove bowl to counter and set to cool until it starts to thicken, about 30 minutes, stirring occasionally. Stir in the drained yogurt and mix with a spatula until completely combined.
Divide mousse among 6 glasses/bowls/ramekins and refrigerate, covered, until lightly set, about 30 minutes.
Meanwhile, put gelatin into small saucepan, sprinkle over 2 tbsp of the passionfruit juice, and let stand 5 minutes. Add remaining juice and heat over medium-low, stirring, until gelatin completely dissolves. Add 1/3 cup sugar, stir until dissolved. Taste, and if it's too tart, add the remaining sugar. Let cool to room temperature.
Take mousses from the fridge and slowly pour the passionfruit mix over the top, about 2 1/2 tablespoons per glass. Don't let it mix with the mousse.
Cover with plastic wrap, chill 2 hours until set.

You can make ganache with it, and use it to ice a yummy cake or cookies.
Make curls with your veggie peeler and put over fruit or custard or whatever.
If you put shreds of it on top of a quick-bread, like banana or berry, it makes a nice crusty topping that tastes great.
It is good in meringue icings too.
I like it in cookies with cranberries and nuts...the tangy and sweet is great.
White chocolate cheesecake is tasty.
I make a cheater mousse too...
Mix melted cooled choc. with softened cream cheese. Mix with some fruit sauce/coulis like raspberry and then fold it all into some whipped cream.
Add some paraffin to the melted choc and use to cover dried fruits.
Make fondue! :)

@sadiepix - ganache sounds wonderful! Is it the same recipe as regular chocolate ganache? Or any changes??
I have made a wonderful white chocolate raspberry cheesecake before... just a lot of work for an everyday (read: not birthday or company!) occasion! :o)
I will post my cheesecake recipe on my blog, now that you've reminded me of it! It's definitely a crowd/husband pleaser!

I use a few tbsp. less of the cream as the white chocolate is more liquid than the darker. Otherwise just the same, plus you can add flavors too..extra vanilla, or almond etc.
I like to make cheesecake in a big flat pan sometimes and portion once cooled, then freeze it. Then you can take out a few pieces as desired to eat, and it goes further, plus bakes faster than a deeper dish. Crust optional and no water bath needed either.
And really, you can just fold melted white chocolate (about 6-8 oz) into any basic cheesecake recipe without having to change anything else about it and bake as usual. Works great.

@sadiepix - I love your cheesecake in a big flat pan idea! I will definitely have to try that as we love frozen cheesecake around here, and only get annoyed waiting for it to thaw enough to slice! :o)
mmm... white chocolate and almond extract! I think that will have to be my next endeavor!

I also use it the same as you use anything. I melt it add broken pretzel pieces and small rice crispies and cranberries and call it chocolate sex. It is that good. Spoon this onto wax paper by the tablespoon and put in candy dish.

Posted this on the ice cream cake thread -- ice cream cake. White chocolate ice cream layered with raspberry sorbet between layers of hazelnut meringue. You can top with with a this layer chocolate ganache or serve with chocolate sauce.
Oh, and passionfruit makes a great cheesecake.

I make "trash" kind of like @JerzeeTomato's recipe--
Take plain chex, cheerios, pretzels, peanuts, plain bagel chips, whatever crunchy/salty contrast you like-- coat in white chocolate, chill on a baking sheet and voila! It can be pretty addicting though.

Another good trash: peanut butter cap'n cruch + peanuts in white chocolate. You cannot believe how much people love this.
Optionally, add broken pieces of pretzel.

@machellebelle - We make that for euchre night and it also has m&m's in it. It needs to come with a warning though. You need a 12-step program to get off the stuff!

@frederika- You really do!! I like taking the vanilla flavored melting candies and covering pretzels in those. Just as addicting! But I add m&ms too. Depends on what I have on hand

My absolute FAVORITE use for white chocolate is a variation on blondies which I created several years ago (and now use much more frequently than the original recipe!). I don't like white chocolate much, but I love this recipe! One of the guys in my choir in high school was addicted to white chocolate, and he literally swooned every time I brought these in (and still does when I come back to visit!).
White chocolate orange blondies
(adapted from Baking Illustrated)
1½ cups all purpose flour
1 teaspoon baking powder
½ teaspoon salt
1½ cups chopped white chocolate or white chocolate chips
1 cup toasted, chopped almonds or pecans
1 ½ cups light brown sugar
1 ½ sticks unsalted butter, melted
2 eggs
2 teaspoons vanilla extract
zest (finely grated) of two to three oranges
Preheat oven to 350 degrees. Line a 9x11 baking pan with parchment or aluminum foil and grease with butter or nonstick spray (I love the Baking Illustrated parchment lining method!!). Whisk together flour, baking powder, and salt in a medium bowl. Whisk together eggs, butter, and sugar in a large bowl. Add flour mixture to wet mixture, and stir together with a wooden spoon or a spatula. Stir in chopped nuts, white chocolate, and zest until fully incorporated. Pour into pan and bake for about 25 minutes, or until the blondies are lightly browned. ENJOY!!!

I make a white chocolate cardamom pistachio truffle, but its quite hard to get white chocolate to set up. Tastes amazing though!
