What's for dinner?
What's your favorite dinner when you're on your own? My sweetie is going to the Yankee game tonight, so I'll be dining solo. Normally I have eggs on toast when I'm home unsupervised, but I would love to get some of that signature SE inspiration.

Baguette with fresh butter and a pepperoncini sidecar. I have diet coke with mine, but fancier folks might enjoy it with a glass of wine.

I love those weird alone dinners! My husband's going to a meeting tonight, so I'm in the same boat. I was thinking of:
Cheddar in a baguette with Sriracha
Thin spaghetti with olive oil, salt, pepper and parmesan
Lots of crackers with cheese and apricot jam
grilled cheese
thin noodles with mustard (i am fully aware that most people think this is gross)
soba with toasted sesame oil, sesame seeds, shoyu and scallions (with sriracha bottle on the side)
Corn Tortillas broiled with jalapeƱo salsa and cheddar (like a pizza)
Which should I choose?

Ramen noodles doctored with fish sauce, ginger with a hit of sesame oil and a raw egg......kinda cook it like a egg drop soup, a big ol steam'n bowl will do me

I'm pretty apathetic about cooking for one, so it usually ends up being egg salad sandwiches or boxed mac & cheese. Sometimes I'll have a chef's salad instead, if we have all the ingredients.

a bowl of chocolate chips and a glass (or two) of tawny port
buttered popcorn and a budget value dry white wine
brie, almonds, sliced baguette and any wine

I love cooking for just myself. It's sort of a treat to be alone in the kitchen, and I actually plan fun dishes to try out when I'm alone. This week I made little spring ramp and asparagus frittatas for a solo dinner and I've been having the leftovers for breakfast (recipe on my blog).
The next time I cook for one, I'm going to make kimchi fried rice. Can't wait.

My husband has been on a week-long business trip since Monday (if not for that, I wouldn't know what to tell you, since it's the first time he's not with me for dinner in five and a half years). So on Monday, I had a slice of lemon meringue pie with a glass of wine (I hadn't had a dinner like this since my single days:-)), yesterday, my in-laws dropped by bearing gifts, that is, takeaway sushi and a bottle of wine for me (yay!), and today I'm planning on having some apples with brie and - yes, a glass of wine. Or two. I'm beginning to think that I quite fancy these "lonely" dinners:-).

If alone which is very rare, i would get a fresh loaf of bread with different kind of cheese, some sliced tomatoes and cucumbers and of course a bottle of chianti, all for myself.

My SO and I seldom eat together anymore and while I cook for him, I almost never eat the same things. For me I make a big bowl of faux thai pasta salad with spicy peanut sauce. and that lasts me all week.

I usually go for vegetarian when my SO and the kids are not around. SO always wants the meat and the DDs hate lentils, so I will go with chickpea curry, dahl and basmati rice or something.

Sometimes I get crazy and cook something neat and new, but usually when hubby is gone (which is a lot sadly) I go for a quick sandwich like tuna, or have what the DH calls my lonely snack...
Brie and crispy crackers, a sliced red pepper and a granny smith apple. Bottle of white wine.
That is all.

When the bf doesn't come over, I rarely eat proper meals. Tonight's dinner might be some raw milk cheddar, homemade bread, and a homemade chocolate cherry cookie. However, there's a TON of asparagus and spring onions in my fridge that need to be eaten before the week is up. I guess I'll cook them on Friday. I want cheese and bread for dinner, dammit.
By the way, normally there would be some (ok a lot of) wine accompanying all that but I've kicked booze out of my diet for 90 days (13 days down so far) so that I can lose some weight and save some money (and give my poor liver a break).

I cook everything I can't get the boy to eat while he's out of town to get them out of my system - soup, Indian food, things involving tofu.
Although I'm also a big fan of french toast for dinners alone as well. Or a big pile of pasta.

Well, I'm single so I have lots of dinners where I'm the only person I need think about. So, I'll just give you tonight's menu.
First: Skirt steak, drizzled with a bit of 25 year old balsamic vinegar.
Then: Green salad with a dressing made with green olive tapenade, red wine vinegar, olive oil, pepper
My TV snack will be 2% Fage yogurt with a little maple syrup mixed in.

My mom and I always have Cobb salad when my dad is out for dinner, creating our own version with whatever is in season and in the fridge (plus the bacon, blue cheese and hard-boiled eggs)!

I am also single and often eat on my own. Dinner tonight consisted of: green minestrone (vegetable stock, broccoli, zucchini, leeks, peas, lentils, and garlic), some slices from an Italian loaf bread, mixed greens with a balsamic vinaigrette, and grapes. Yum!

i had a big bowl of romaine lettuce with half an avocado and some leftover roasted aparagus with a mustard vinaigrette, followed by some fried ripe plaintains and potatoes with ketchup and creme fraiche. i live alone so i get to eat weird food every night.

I eat alone most nights and I try to include a protein choice with lots of fresh fruits and vegetables. I make refrigerator bran muffins, so it's easy to bake just one in an oiled custard cup. Mostly, I enjoy combination vegetable salads with a spicy vinaigrette.
About once a month, I buy the roasted chicken at the market , or roast one myself and I'm making a list of all the ways one can serve it. One chicken gives me at least four dinners and stock.
My budget only includes wine if I have guests and I try not to use any processed foods, mixes or products that have a "list" of additives. In winter, I use a lot of tinned tomatoes. Chilled, the diced ones are better in salad than the tasteless fresh ones.
Canned beans, lentils or split peas can be used for great crockpot meals. I like setting it up in the morning so dinner is almost ready when I get home

My husband is always home, so I am never alone. However, I do cook for myself every once in a while. When I'm hungry, I just make enough for myself. Or if I am not in the mood for what he's made for dinner, I'll prep my own thing since I'm too lazy to go out and get some pho alone and fight for a close parking space on the street when I get back.
Like Markbb, I make ramen (Myojo chukazanmai only) with shrimp, mustard cabbage or spinach, kamaboko, Spam, sriracha, and a raw, unbeaten yolk on top. Their soup bases usually have sesame oil in them, so that's taken care of.
There are times when I'm just in the mood for cereal. So cereal and milk.
Beef jerky.
It's not a great dinner idea, but that's just me. :D

Otherwise...eggs or creative grilled cheese.....using whatever bread, cheese, veggies or fruit I have on hand.
