What to do with lemon curd?
I bought a jar of lemon curd at Trader Joe's on a whim. The sign at the store said to spread it on crumpets, which I did (delicious!). Now what do I do with it?

Make a trifle, fill miniature tarts, use it as a cupcake filling (make a hole in the cupcakes and pipe it in), spread it between cake layers. Don't you just love lemon curd?

It's also really good on anything blueberry. I sometimes make blueberry muffin tops. I undercook them slightly and then finish them in the toaster for breakast. Served with lemon curd??! They are the best. It's wonderful on blueberry scones and plain scones as well. Are scones the same as crumpets? I'll have to look those up.

Lemon curd - yum! I usually make my own, and serve it in a little dish with a meringue kiss on top and a shortbread cookie stuck in the side. I call it "Deconstructed Lemon Meringue Pie." :)

Spread on a crepe, roll up, powdered sugar on top. You are so going to need more lemon curd!

All of the above; Yum, and tried & true {except the toast!}. I make my own as well. I have a bountiful berry garden in the Summer & I use the curd as a base on puff pastry {large or individiau} tarsts topped with berries. I actually like to stew strawberries and add a little finely chopped rosemary in it. layer on top of thin layer of lemon curd then top with whole berries. It is so delicious..I am thrilled spring is upon us!

Another idea that I forgot about: use as a cookie filling. Make a batch of your favorite sugar cookies, cutting a hole from the center of half of the cookies before you bake them. Make a cookie sandwich by spooning a dollop of lemon curd on the cookies without holes. Top with a "holey" cookie.

Hmm...you could make lemon curd tarts, lemon curd hamantaschen (like me!), maybe use it in a lemon pie, thumbprint cookies...the possibilities are endless!
