What in the world can i do with a dozen eggs?

Under normal circumstances a dozen or so eggs wouldn't stand a chance in my kitchen, but do to the fact that I'm undergoing a renovation and the only appliances I have are a microwave, toaster oven and grill I'm quite perpelxed over what to do with them. They need to be used up pretty quickly (they've been sitting in the fridge for a week already), my neighbor is letting me borrow her kitchen while she's away for Passover so I can always whip something up then but that's in another week and I'd rather not wait that long. Any ideas?

Does your grill have a side burner? If so, boil and make either egg salad or deviled eggs. If not throw a pan out there and give everyone an omelette for dinner.

Hollandaise and angel food cake. :P

Make egg muffins. Beat up a dozen eggs with some milk or cream, salt and pepper and pour into greased muffin tins with some cheese, chives, ham, bacon...whatever. Bake low til set and a little puffy. Cool and freeze. You can nuke em and hit the road running!

Can the toaster oven bake? If so, creme brulee, bread pudding. You could heat up a pan on the grill and fried eggs, or scrambles or a frittata ... I would a non-stick pan but a well seasoned cast iron maybe.

Any kind of baked custard. Creme caramel, flan.

Microwave omelet

And egg in the basket would be easy to adapt for a toaster oven:

A huge frittata for six.

Thanks guys, while most of these suggestions are lovely my toaster oven while it can bake is tiny so large fritattas and angel food cake are definately out. i will check into eggs in a basket though, haven't had those in a while...

Two week old eggs aren't old, unless they were pretty old to begin with. They should be good for at least a month. Or, according to the USDA, they don't lose nutrition for 4 weeks, but even after that, they aren't going to actually go bad for quite a while yet.

Hmmm.....breakfast! Spray a muffin tin with Pam and crack an egg in each spot and toss on the grill!

Crustless quiche (or crusted!), souffle, frittata, poached eggs with asparagus, lots of cakes!

Quiche, frittata, matzo brie!, omelets, cakes, hollandaise, mayonnaise or aioli, cookies, go nuts!

Chew On That

Shirl says, make a sponge cake. That'll take up at least 8 to ten. My husband used to pour some rum on the finished product. I just put whipped cream on the slices or some ice cream. Go for it. You'll love it. Good luck. Shirley
