What do you eat a Vidalia Onion with?
I used to cut up Vidalia onions with tomatoes, cucumbers and chick peas, pour some Annie's Cilantro and Lime dressing over it and eat it...the dressing sort of cut the raw-ness of the onion. Annie's doesn't make that dressing any more and i love raw vidalias, but what to put on them or with them? Any ideas?

I know you're asking for a raw application, but Tyler Florence did some pretty nice fried Vidalia Onion rings using rice flour in his Tyler's Ultimate show this past weekend... I might try the recipe soon. Look for it in the Food Network site.
Also, Paula Deen has also a recipe of Vidalias baked with butter and a boullion cube inside. I would do it with a vegetable bullion cube, but they seem tasty.

They are so sweet and delicious raw and cooked! I love them raw on burgers and on sandwiches (especially with liverwurst), in all sorts of salads from greens to pasta to potato to egg to tuna....... I could almost eat them like an apple, I did say ALMOST. ;-)
I use them as I'd use any onion - in any dish that you'd add onion. Carmelized, they're as sweet as candy. I saute them lightly for steak and sausage sandwiches - leaving a little crunch. They are my favorite onion. The only time I wouldn't use them is if pearl onions, scallions or shallots would work better in the dish. Enjoy!

I put them in a slow cooker with a seared seasoned pork shoulder and sweet potatoes. tasty.

oh my gosh Kdjmom you must be reading my mind! I went to the store today and saw the vidalias in and wonderfully fresh, I will admit I bought 50 lb bag. I never saw Paula Deens resipe for them baked with a bullion cube, but I bake them all the time. I also have a bad habit of carmelizing a ton of them and just putting them in the fridge and (please dont kill me) making a sandwich out of them. Ok I admited it, I think I feel better now;)

I make dressing out of them, among other applications. Sweat them in a little bacon fat, then put them in a blender with a little dry mustard and some cider vinegar, turn it on and slowly add the oil to make an emulsified vinaigrette. Salt and pepper to taste, poppy seeds if you want a little texture. Fabulous on salads.
I also do onion rings, or roast halves.
A cilantro lime dressing should be pretty easy to put together, though.

This is a really basic onion sandwich, but I think it's unbelievably delicious: toasted bialy, cream cheese, thinly sliced onion and tomato, and salt. Just slather up your bialy straight out of the toaster and sprinkle the salt on the tomato. Everything gooshes together from the heat of the toasted bialy and becomes all creamy and delicious and the onion adds that je ne sais quoi. I definitely eat it morning, noon, and night. Yum!
A lot of people combine mango and onion as well, maybe with a limey dressing. I'm not a fan, but I suppose it could float your boat.
