Here's what Rachel Ray would do if she were into Jewish cuisine:
1 Can each: carrots drained, sweet potatoes, pineapple tidbits. Mix together with a few prunes. Add about 1/2 C brown sugar, 1 tsp cinnamon, 1/2 tsp. ginger and about 1/2 stick melted butter (or parve marjorine). Bake about 1/2 hour. Quick and Delicious. I call it "Can Opener Tzimmes."

I made this last year, and it was a hit.
8 large carrots, peeled, cut in chunks
1 cup dried fruit(pears, apricots, etc.)
a handful of dried cranberries
2 cups orange juice
1/3 cup white sugar
4 tbl. butter, melted
1 tsp lemon zest
1/2 tsp gresh ginger
-put the carrots and dried fruit in a pot, cover in orange juice
-bring to a boil, and let boil for 10 min
-stir in sugar and butter. simmer for 1 hour or until the liquid is mostly absorbed
- sprinkle with lemon zest and ginger, and let simmer 5 more min.

I've never known tzimmes to not be vegetarian but maybe that's just our family.
I modified this from a recipe online and I don't always measure:
1 large onion, chopped
2 tbsp. margarine (or chicken fat)
4-5 lb of carrots
3 or 4 med. sized sweet potatoes or yams- cubed
grated ginger
1 cup of any combination of dried fruit: prunes, apricots, raisins, cranberries, etc.
honey - eyeball it. A few tablespoons?
1-2 oranges - juice and zest
1-2 lemons- juice and zest (you can also use lime and/or grapefruit zest)
1 tsp. of cinnamon
Brown sugar (eyeball it- make it as sweet as you'd like)
1 tsp. nutmeg
salt and white pepper
Cook sweet potatoes and carrots in water until firm
Drain. Combine with the rest of the ingredients.
Either cook stove-top or bake.

Non-vegetarian tsimmes? SHTUSS!
I'd just boil up some sweet potatoes and carrots (and apples maybe?) and mash with honey, raisins. You could probably do well steaming them if you don't want to boil. Add cinnamon and orange juice as desired.

Oooh I've never had a vegetarian tzimmes, I suppose it'd be the same as our recipe minus the meat? You can give it a try!
Ingredients
1 lb. carrots, cut into 1-inch pieces
6 med. sweet potatoes
12 oz. pitted prunes
1 C. orange juice
1/2 C. honey
Directions
Peel potatoes and cube. Place in a Dutch oven with carrots. Place prunes over potatoes. Add honey and orange juice. Add water until all ingredients are covered. Bake covered at 350 degrees for 1 hour. Remove cover and bake 2-3 hours more unitl meat is done.
