sesame seeds and sesame oil?

I have a fragrant bottle of TJ's toasted sesame oil and a scoop of untoasted sesame seeds from Wild Oats. Where the heck should I store them? Cool and dark? Fridge? I am scared they will go rancid and oh how I love my asparagus with toasted sesame oil and lemon!

I have kept my bottle of sesame oil in the fridge and It has stayed fresh for over a year. Which , frankly surprises me , but it does form a thicker layer at the top because the oil is cold

Sesame oil if opened should definitely be kept in the fridge. The seeds should be kept air-tight and used quickly or kept in the fridge or freezer for several months.

Fridge the oil. It's one of the easiest to go rancid with temp changes. As Chelly said, you'd have to leave it out a few minutes to make it pourable but chilling it will definitely extend its shelf life.

The airtight container recommendation for the seeds works in either fridge or freezer. If you have the real estate in your freezer, this is optimal.

And use that good stuff!! :D

I keep both the oil and the seeds in the fridge.

I was told by a Penzey's spice worker that sesame seeds are best kept in the freezer. And as others said definitely the fridge for the oil.

I've always left my sesame oil out on the rack at home, and sesame seeds in my cupboard. No drastic temperature changes. Then again, I go through a bottle of oil (5 oz) and sesame seeds ~monthly. o.O

The oil and seeds will normally keep quite well in the fridge. But a word of warning - I trusted my sesame seeds one time and sprinkled them on dinner rolls, not noticing they had gone rancid even under refrigeration. Had to cut the tops off the rolls and we still ate them, but now I always date the new jar and sniff and taste first! Also, purchase smaller quantities if you find you don't use them rapidly.

Fridge the oil and freeze the seeds in airtight packaging.

I agree with GumbeauxGal. The oils in the nuts and seeds goes rancid fast. It's one thing I've learned from Rachel Ray. (That and to pre-wash produce.)
