Parsley roots...what to use them for?

Yesterday I found at the local Key Foods a package of fresh parsley roots. They were big bulbous things, not the kind of roots I would expect a spindly plant like parsley to have. What do you use these for...is it a Passover thing, or do you use them for some recipe? I am puzzled!
