Preserved Lemons
OK, I bought some preserved lemons because I have never used them before, but I wanted to try my hand at them. I'm looking for suggestions. I see a million recipes for Moroccan Chicken, but what else can I do with them. I was thinking of making a chutney/relish out of them and using on some grilled meats. Anyone have any other ideas?

I was looking for a lamb stew recipe a few months ago and found a Moroccan Lamb Stew with preserved lemons recipe on FN.
Also, preserved lemons are very versatile. You can add it almost anything.
Couscous, panzanella, pasta salads (I like orzo), oh, I think there is a relish recipe from Chez Panisse with preserved lemons as the base. If you haven't made that Moroccan Chicken yet, do. I love Moroccan Chicken. Once you start using it, you realize how many other places you want that piquant lemony brightness.

They're heavenly on seafood. You can make your own preserved lemons easily. Scrub the lemons, just enough to remove the wax from the store. Trim the stem end of the lemon, then quarter the lemon, but leaving the flower end still intact (the lemon rind should be intact on the flower end). Then, take enough kosher salt and lemon juice (about 5 lb. of kosher salt for 5 lb lemons) to form a paste. Put the salt paste and lemons in a large container. They're ready to use in about a month.

Make sure you rinse the lemons before using them. The salt can be a bit much!

Thanks for the ideas people. I ended up using them to make marinade for a leg of lamb. I combined it with parsley and garlic in the food processor and spread it on the lamb, let it sit for 6 hours. It came out very nice, served with a salsa verde of mint and basil.
I will try the moroccan chicken at some point, but I wanted to grill so bad sicne we have finally broken into half decent weather in Boston!
