Parsley roots...what to use them for?

Yesterday I found at the local Key Foods a package of fresh parsley roots. They were big bulbous things, not the kind of roots I would expect a spindly plant like parsley to have. What do you use these for...is it a Passover thing, or do you use them for some recipe? I am puzzled!

Mmmmm...yummy.
Eat these like any root veggie. Think turnip/parsnip.
Great boiled and mashed up with potatoes or other veg.
Slice and stir-fry til tender with soy or other sauce.
Roast in chinks with rutabaga, carrots, beets, etc.
Chop up and put in a soup or stew. Neat flavor.
I use mine at the end of the growing season when I thin the plants for the next year. A bit more bitter than younger ones would be, but still tasty. (Hard to find in markets where I am.)

PS - There is more flavor in the roots and stems than in the leaves of parsley! (But the leaves are prettier...)

You can wash them thoroughly and use them in your next batch of stock. I think they'd be especially well suited for veggie stock as that tends to be bland at times.

Chop them up and scatter them on your next batch of roasted potatoes.
